  • 300g soft tofu
  • 1 can (135g) tuna, drained
  • 1/2 medium carrot
  • 100g mozzarella cheese (generous amount)
  • 1 Tbsp unsalted butter

Filling Seasoning

  • 2 Tbsp cooking sake
  • 2 Tbsp mayonnaise
  • 1 tsp salt
  • Pinch of black pepper

Crack 6 fresh large eggs into a bowl. Add 1 tablespoon of cooking sake, which helps to eliminate any eggy odor and enhances flavor, and 2 pinches of salt. Whisk gently with a fork or whisk until the yolks and whites are well combined and smooth.

Wrap the prepared tofu in a clean kitchen towel or cheesecloth and squeeze out as much water as possible. This is crucial to prevent a soggy filling. Mash the squeezed tofu with a fork or your hands. Add the drained tuna and the seasoning ingredients (2 Tbsp cooking sake, 2 Tbsp mayonnaise, 1 tsp salt, and a pinch of black pepper) to the mashed tofu. Mix everything thoroughly until well combined.

Finely dice about half of a medium carrot (approximately 1/4 carrot was used, counting as 1/2 medium). Place the diced carrot in a microwave-safe dish, cover with plastic wrap, and microwave for 2 minutes until cooked. Let it cool slightly, then chop it even finer if desired. This step helps to bring out the carrot’s natural sweetness and adds a pleasant crunch. Add the finely chopped carrot to the tofu and tuna mixture and stir well.

Take about 5 tablespoons of the whisked egg mixture from step 2 and add it to the tofu and tuna filling. Gently mix to incorporate. Reserve the remaining egg mixture for the omelet base. This helps achieve the right consistency for the filling.

Once the butter is melted, pour about one-third of the remaining egg mixture into the pan and spread it thinly to form a crepe-like base. When the edges of the egg crepe begin to set, carefully spoon the tofu and tuna filling in a line down the center of one half of the crepe. Generously sprinkle mozzarella cheese over the filling.
