Ingredients

  • Dried seaweed 30g
  • Canned saury 1 can (400g)

Seasoning

  • Fish sauce 2 Tbsp
  • Salt 1/2 Tbsp (adjust to taste)
  • Minced garlic 1/2 Tbsp
  • Sake or cooking wine 1 Tbsp
  • Pepper a pinch

Cooking Instructions

Step 1

First, soak the dried seaweed (30g) in cold water for about 10-15 minutes until it’s soft. Gently rinse the rehydrated seaweed under running water. Then, cut it into bite-sized pieces, about 3-4 cm in length. Place the prepared seaweed in a pot.

Prepare one can of saury (400g). Carefully drain the saury flesh from the can and place it in a separate bowl. Use chopsticks or a fork to flake the saury meat. The soft bones within the saury are fine to leave in; they add nutrition and a pleasant texture.

Add water or anchovy broth to the pot with the seaweed, ensuring it’s fully submerged. Bring it to a rolling boil over high heat with the lid off. Once boiling vigorously, add all the flaked saury meat to the pot.

Now, it’s time to add the seasonings. Stir in 1/2 Tbsp of minced garlic and 2 Tbsp of fish sauce. Adding 1 Tbsp of sake or cooking wine will help remove any fishy odors and enhance the flavor. Finally, add a pinch of pepper. It’s best to season lightly at first and adjust with salt later for the final taste.

Let the soup boil vigorously over high heat for 10 minutes. Then, reduce the heat to medium-low and simmer for another 15 minutes. During this simmering process, oil and scum may rise to the surface from the saury. Skim these off occasionally to keep the soup clear and clean tasting.
