  • 1/2 medium onion
  • 1 stalk green onion
  • 2 cloves garlic (minced)

Seasoning
  • 1 Tbsp chili oil
  • 2 Tbsp red pepper flakes (gochugaru)
  • 1/2 Tbsp red pepper paste (gochujang)
  • 3 Tbsp perilla seed powder (deulkkaegaru)
  • 1/2 Tbsp soy sauce for soup (guk-ganjang)
  • 1/2 Tbsp salted shrimp (minced)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare the potatoes and onion. Peel the potatoes, wash them thoroughly, and cut them into bite-sized cubes (about 2-3 cm). Cutting them too small might cause them to break apart while cooking, so aim for a moderate size. Slice the onion similarly.

Step 2

Heat 1 Tbsp of chili oil in a pot over medium-low heat. Add the cubed potatoes and onions and stir-fry until they become slightly translucent and glossy, about 3-5 minutes. Stir-frying the ingredients beforehand will significantly deepen the stew’s flavor.

Step 3

While the potatoes and onions are stir-frying, let’s prepare the seasoning. In a small bowl, combine 2 Tbsp red pepper flakes, 1/2 Tbsp red pepper paste, 3 Tbsp perilla seed powder, 2 Tbsp minced garlic (or 2 finely minced garlic cloves), 1/2 Tbsp soy sauce for soup, 1/2 Tbsp finely minced salted shrimp, and a pinch of black pepper. Mix them well.

Step 4

Pour 500ml (about 2.5 cups) of water into the pot with the stir-fried potatoes and onions. Add all the pre-mixed seasoning ingredients. Bring the stew to a boil over high heat, then reduce the heat to medium once it starts boiling. Simmering gently like this allows the flavors to meld beautifully, resulting in a much tastier stew.

Step 5

It’s crucial to reduce the heat to medium right after the stew begins to boil. If you continue boiling over high heat, the liquid will evaporate quickly, making the stew taste flat. Skim off any foam that rises to the surface while boiling; this will make the broth cleaner and more delicious.

Step 6

Continue to simmer gently over medium heat for about 10 minutes. You’ll notice the stew getting thicker and the color deepening as the potatoes cook through and become tender. During this stage, the ingredients’ flavors harmonize, creating a rich taste.

Step 7

Finally, add the sliced green onion. Taste the stew and adjust the seasoning if needed with more salted shrimp or soy sauce for soup.
