Ingredients

  • 2 cans canned tuna (drained)
  • 500g Korean radish (approx. 1/4 medium)
  • 1.5L stock (anchovy-kelp stock or rice water)
  • 2 stalks green onion
  • 1.5 Tbsp perilla oil
  • 1 Tbsp soy sauce for soup (Gukganjang)
  • 1 Tbsp fish sauce (e.g., anchovy or sand lance)
  • 1.5 Tbsp minced garlic

Cooking Instructions

First, prepare all the ingredients for the soup. Drain the canned tuna thoroughly by placing it in a sieve. Wash the Korean radish and set aside. Prepare 1.5L of stock by simmering anchovies and kelp, or use rice water. Gently warm the stock. Slice the green onions diagonally.

Slice the prepared radish into bite-sized, square pieces about 0.3cm to 0.5cm thick. If the pieces are too thick, they will take longer to cook, so aim for a moderate thickness. Thinner slices will allow the radish to absorb more flavor and become tender.

Place the sliced radish in a pot and pour in the 1.5L of stock. Bring to a boil over medium-high heat on the stovetop and cook until the radish turns translucent and is about 80% cooked. Skim off any foam that rises to the surface for a cleaner broth.

While the radish is cooking, prepare the sliced green onions. These will be added towards the end of the cooking process, so have them ready, sliced diagonally.

Once the radish is sufficiently tender, add both cans of drained canned tuna to the pot. Be sure to remove the oil from the tuna cans, as it can make the soup greasy. Let it simmer for a moment after adding the tuna.

Now, add the seasonings to enhance the umami flavor. Add about 1.5 tablespoons of minced garlic. Garlic will add a deep flavor to the broth.

Add 1 tablespoon of fish sauce. Using anchovy or sand lance fish sauce will add a deep and refreshing umami taste. Adjust the amount based on your preference and taste.
