Nourish your body and soul with a bowl of warm noodle soup that is both refreshing and invigorating. This dish features tender beef, crisp broccoli, and smooth noodles, creating a satisfying and comforting meal.
Main Ingredients- 3 slices of beef for bulgogi (approx. 100g)
- 1 handful of oyster mushrooms (approx. 50g)
- 1 handful of broccoli florets (approx. 50g)
- 2 servings of noodles (thin or medium)
- 1/2 stalk of green onion
Seasoning & Broth- 1 Tbsp minced garlic
- 1 Tbsp chicken stock (or kelp broth)
- 1 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 2 Tbsp vinegar
- A pinch of black pepper
- A pinch of salt
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Boil the noodles in plenty of water, stirring occasionally to prevent them from sticking. Adjust the cooking time according to the type of noodles you are using.

When the water comes to a boil, add a cup of cold water. Once it boils again, drain the noodles. Repeating this process will make the noodles chewier.
Step 3
Immediately rinse the cooked noodles under cold water to remove excess starch, then drain them thoroughly in a colander. This prevents the noodles from becoming mushy and keeps them delightfully firm.
Step 4
Cut the broccoli into bite-sized florets. Bring a pot of water to a boil with a pinch of salt, and blanch the broccoli for just about 1 minute. Overcooking will soften the broccoli too much and reduce its nutritional value, so aim for a slightly crisp texture.

Trim the ends of the oyster mushrooms and tear them into bite-sized pieces with your hands.

Drain the blanched broccoli and the torn oyster mushrooms well.

Briefly dip the bulgogi beef slices in boiling water until they are no longer pink. This helps to remove any impurities and ensures a clean-tasting broth. Rinse them under cold water afterwards.

Slice the blanched beef into thin strips, about 1cm wide. Tear the oyster mushrooms into manageable pieces by hand.

In a pot, add the thinly sliced green onion and minced garlic.

Sauté the green onions and garlic over low heat until fragrant. Then, add water and bring to a boil. Sautéing the aromatics first will deepen the broth’s flavor considerably.

Once the water boils, stir in 1 tablespoon of chicken stock and let it simmer until it boils again. Chicken stock will add a rich umami flavor to the soup.

Add 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, and 2 tablespoons of vinegar. Stir well and let it simmer. The vinegar adds a pleasant tanginess that cuts through richness.

Taste the broth and adjust seasoning with additional salt or soy sauce if needed, according to your preference for saltiness or sourness. Sprinkle in a pinch of black pepper, add the remaining sliced green onions, and immediately turn off the heat. Finish with 1 tablespoon of sesame oil for added aroma and richness.
