  • 210g Korean beef for stew (use lean cuts)
  • 1/4 Korean radish (about 300-400g, choose firm and fresh)
  • 1 Tbsp minced garlic
  • 1/2 stalk green onion (generous amount)
  • 1 Tbsp soup soy sauce (for umami)
  • Pinch of coarse sea salt (to adjust seasoning)
  • 2 Tbsp sesame oil

In a pan, heat 1 tablespoon of sesame oil over medium heat. Add the beef for stew and stir-fry until it’s lightly browned. This step helps to bring out the rich flavor of the beef.

Peel the radish, wash it thoroughly, and cut it into thick, bite-sized pieces (about 1-1.5 cm thick). Add the radish to the pan with the beef and sauté for another 2-3 minutes until the radish becomes slightly translucent. Then, pour in enough rice water to generously cover the beef and radish. (If you don’t have rice water, plain water or kelp broth can be used.) Skim off any foam that rises to the surface as it boils; this will result in a clearer, cleaner-tasting soup.

Wash and thinly slice the green onion. Add the sliced green onion to the pot while it’s simmering. The mild sweetness of the green onion will infuse into the soup, adding another layer of flavor.

Add 1 tablespoon of soup soy sauce to season the soup. Let it simmer for another few minutes after adding the soy sauce. It’s important to taste and adjust the seasoning as you go.

To achieve the perfect balance, adjust the seasoning with a pinch of coarse sea salt, as the soup soy sauce might not be enough. Add the salt gradually, tasting as you go, to avoid making it too salty. Finally, drizzle in the remaining 1 tablespoon of sesame oil for an extra boost of nutty aroma.
