  • 600ml Anchovy and Kelp Broth
  • 9 tablespoons Ground Perilla Seeds
  • 3 tablespoons Sweet Rice Flour (for thickening)
  • 4 tablespoons Soy Sauce for Soup (Guk-ganjang)
  • 10cm Green Onion
  • Salt to taste

Begin by cleaning your mushrooms and slicing them into bite-sized pieces, about 2-3cm each. Finely chop the green onion to add a fresh aroma later. Feel free to use a variety of mushrooms like shiitake, oyster, or king oyster for a richer flavor profile.

In a bowl, combine the 9 tablespoons of ground perilla seeds and 3 tablespoons of sweet rice flour. Gradually add a little water while whisking to create a smooth, lump-free paste. This mixture will form the creamy, nutty base of your soup.

Pour the 600ml of savory anchovy and kelp broth into a pot and bring it to a boil over medium-high heat. Once boiling, add the prepared mushrooms. Reduce the heat to medium and simmer until the mushrooms are tender and cooked through, infusing the broth with their earthy flavor.

When the mushrooms are nearly cooked, stir in 4 tablespoons of soy sauce for soup (Guk-ganjang) to season the broth. Guk-ganjang provides a deep umami flavor, so it’s best to start with 4 tablespoons and adjust to your taste. If needed, add a pinch of salt or more soy sauce for perfect seasoning.
