First, it’s important to properly prepare the dried radish greens (Siraegi). If you’re using dried Siraegi, make sure to soak them thoroughly until softened, or boil them in water until tender. Drain them well, squeeze out any excess water, and cut them into bite-sized pieces for easier eating. If you’re using pre-prepared Siraegi, you can proceed directly.

In a pot, add about 1 liter (approximately 5 cups) of rice water (Ssal-tteulmul). Dissolve 3 tablespoons of Doenjang (soybean paste) into the rice water. Rice water adds a subtle savory depth and makes the soup smoother. Once the Doenjang is well dissolved, add the prepared Siraegi greens. Bring to a boil over medium heat and simmer for about 10 minutes, allowing the Siraegi to absorb the flavor of the Doenjang.

Once the Siraegi is somewhat tender, add 1 tablespoon of minced garlic and 3 tablespoons of perilla seed powder (Deulkkae garu). Stir well to combine. Using a generous amount of perilla seed powder will make the soup richer and more aromatic.
