Ingredients

  • Fresh Mugwort: 3 bowls (generous amount)
  • Shelled Clams (purged): 1 cup (approx. 150g)
  • Toasted Soybean Powder: 1 cup (approx. 100g)
  • Minced Garlic: 1 tablespoon
  • Fermented Soybean Paste (Doenjang): 2 tablespoons

Cooking Instructions

Step 1

First, prepare the fresh mugwort by removing any tough stems or wilted leaves. Place the mugwort in a bowl and wash it thoroughly under running water multiple times to ensure all dirt and impurities are removed. Drain the washed mugwort in a colander. Ensure your clams have been purged of sand beforehand.

Step 1

Step 2

In a bowl, take the cleaned and drained mugwort. Sprinkle the toasted soybean powder evenly over the mugwort. Gently toss the mugwort and soybean powder together with your hands until the powder is well distributed. It’s important for the soybean powder to coat the mugwort evenly.

Step 2

Step 3

In a pot, add sufficient water (or anchovy-kelp broth) and dissolve the doenjang (fermented soybean paste). Bring this mixture to a boil over medium heat. Once the doenjang broth is vigorously boiling, carefully add the mugwort and soybean powder mixture.

Step 3

Step 4

As the soup begins to simmer after adding the mugwort and soybean powder, the fragrant aroma of mugwort will fill your kitchen, indicating that the delicate flavor is infusing into the broth.

Step 4

Step 5

Once the soup returns to a boil, add the purged clam meat. The clams will cook quickly. Be careful not to overcook the clams, as they can become tough if boiled for too long.

Step 5

Step 6

Finally, add the minced garlic and simmer for another moment to complete this delicious Clam and Mugwort Soup with Soybean Powder. The natural aroma of the mugwort is so pleasant that adding green onions isn’t necessary for enhanced flavor. You can add a dash of soy sauce for seasoning if desired.

Step 6

Step 7

Serve this finished soup warm with a bowl of rice for a satisfying and hearty meal. Enjoy this healthy and delicious broth that will awaken your spring appetite!
