Hearty and Flavorful Tteokgalbi Fried Rice
Easy Vegetable and Egg Fried Rice Recipe Using Frozen Tteokgalbi
Try making a satisfying and delicious fried rice using leftover vegetables and frozen tteokgalbi from your fridge. The rich umami and chewy texture of tteokgalbi elevate this simple dish into a hearty meal. It’s especially great for kids who need to eat a balanced diet of meat and vegetables!
Essential Ingredients- 1 piece Tteokgalbi (Korean grilled short rib patties)
- 2 Tbsp Paprika (diced)
- 2 Tbsp Green Beans (diced, vegetables can be substituted to your preference)
- 3-5 Tbsp Scallions (chopped)
- 1 Egg
- Pinch of Salt
- Pinch of Pepper
- 0.5 Tbsp Sesame Oil (for finishing)
Cooking Instructions
Step 1
First, prepare the frozen tteokgalbi. I grilled mine until golden brown using an air fryer. Cooking times and temperatures can vary by product, so be sure to check the instructions on the packaging!
Step 2
Once cooked, cut the tteokgalbi into bite-sized pieces. Prepare your desired vegetables for the fried rice. I used colorful paprika and crisp green beans, but feel free to use any vegetables you have on hand, such as chives, onions, zucchini, or carrots.

Chop the scallions to create fragrant scallion oil for the fried rice, and lightly beat one egg.
Step 4
Heat a generous amount of cooking oil in a pan over medium heat. Add the chopped scallions and stir-fry until they become soft and fragrant, infusing the oil with their flavor. This slow sautéing is key for developing a delicious base.

Once the scallion oil is aromatic, add the cut tteokgalbi and prepared vegetables (paprika, green beans, etc.) to the pan. Stir-fry lightly. Since the tteokgalbi is already cooked and you want to maintain the vegetables’ crispness, avoid overcooking.

Push the ingredients to one side of the pan. Pour the beaten egg into the empty space and scramble it. Stir the egg as it cooks until it reaches a soft scramble consistency, somewhere between runny and fully set. Then, mix it with the other ingredients.

Add the cooked rice to the pan and stir-fry quickly over high heat. Use your spatula to break up any clumps of rice and ensure everything is evenly combined. Season with salt to taste.
Step 8
Once the fried rice is fully cooked, turn off the heat. Drizzle with sesame oil for a nutty aroma and enhanced flavor. Be mindful not to add too much, as it can make the dish greasy; about 0.5 tablespoon per serving is ideal. Enjoy your delicious meal!
