Even though the weather is getting warmer, we can’t skip hearty soups! Especially on a rainy day, a special dish comes to mind: Budae Jjigae. For us, who are soup lovers, Budae Jjigae is an indispensable delicacy. Today, I’ll show you how to easily make Budae Jjigae at home using Spam and Kimchi, creating a deep and rich flavor. Arrange Spam, sausages, kimchi, rice cakes, ramen noodles, frozen dumplings, and vegetables artfully around the table, place the secret sauce in the center, pour in some broth, and boil it instantly for a mouth-watering visual that will make you give a thumbs up! You won’t need any other side dishes. The whole family will finish a bowl of rice with just this Budae Jjigae. The Budae Jjigae sauce is made with a golden ratio of soy sauce, gochujang, doenjang, mirin, fish sauce, sugar, minced garlic, and chili powder. Adding about one spoonful of doenjang will allow you to achieve a restaurant-quality, deep, and excellent Budae Jjigae flavor using common household ingredients, without any store-bought sauces or seasonings.

Budae Jjigae Base Ingredients

  • 1L Anchovy & Kelp Broth
  • 1 can Spam (approx. 200g)
  • 5 Frankfurters
  • 100g Aged Kimchi
  • 1/2 Onion
  • 1 Shiitake Mushroom
  • 2/3 Green Onion Stalk
  • 1 handful Rice Cake Slices (Tteokguk Tteok)
  • 1 packet Ramen Noodles
  • 2-4 Frozen Dumplings
  • A little Red Chili Pepper (optional)

Golden Budae Jjigae Sauce

  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochujang (Korean Chili Paste)
  • 1.5 Tbsp Gochugaru (Korean Chili Flakes)
  • 1 Tbsp Doenjang (Korean Soybean Paste)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 2 Tbsp Mirin (or Cooking Wine)
  • 1 Tbsp Fish Sauce (or Anchovy Extract)

Cooking Instructions

Step 1

First, prepare 1 liter of anchovy and kelp broth to add a deep flavor to your Budae Jjigae. Boil dried anchovies and kelp to make the broth.

Slice one can (200g) of Spam into thick, flat pieces. Make diagonal cuts in the 5 frankfurters. Finely chop the green onion and red chili pepper (if using).

Slice half an onion into approximately 0.4cm thick strips. Score the shiitake mushroom with a knife for a more appealing look.

It’s best to use well-fermented, sour kimchi for Budae Jjigae to enhance its flavor. Cut the kimchi into bite-sized pieces using scissors. Once you have your kimchi, frozen dumplings, rice cake slices, and ramen noodles ready for a hearty meal, it’s time to make the essential Budae Jjigae sauce!

In a deep bowl, combine 1 tablespoon of minced garlic, 1 tablespoon of gochujang, 1.5 tablespoons of gochugaru, 1 tablespoon of doenjang, 2 tablespoons of soy sauce, 1 tablespoon of sugar, 2 tablespoons of mirin, and 1 tablespoon of fish sauce. Mix them thoroughly with a spoon to create the delicious sauce in advance.

In a wide pot or stew pot, arrange the prepared Spam, sausages, cut kimchi, sliced onion, shiitake mushrooms, rice cake slices, ramen noodles, and frozen dumplings in a circular pattern. Arranging the ingredients beautifully is a tip for enhancing the visual appeal of your Budae Jjigae.

Once all the ingredients are arranged, place the pre-made sauce in the center, looking attractive. Then, carefully pour in the 1 liter of prepared anchovy and kelp broth. Your delicious Budae Jjigae is almost ready!

Turn the heat to high and bring the pot to a rolling boil. Once the broth is boiling, let it simmer until the flavors of the ham, sausages, kimchi, and other ingredients meld well with the broth, and the frozen dumplings are cooked through. When all ingredients are tender and cooked, turn off the heat and enjoy your meal. You’ve successfully made a fantastic Budae Jjigae at home!
