  • 100g Beef (stewing cut)
  • 1/6 Onion
  • 1 handful Napa Cabbage leaves (approx. 3-4 leaves)
  • 1/2 stalk Green Onion
  • 150g Tofu (about 1/2 block)

Seasoning & Aromatics

  • 3 Tbsp Doenjang (Korean soybean paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic

Cooking Instructions

Step 1

Start by placing the 100g of beef (stewing cut) in a pot. Add enough water to cover the beef, and then dissolve 3 tablespoons of doenjang into the water. Ensure there are no lumps for a smooth base.

Prepare your vegetables. Cut the napa cabbage leaves into bite-sized pieces. Slice the onion into thick strips. Chop the green onion diagonally.

Once the doenjang mixture begins to boil, add a little more water and bring it back to a boil. This helps to cook off any raw flavors from the doenjang. Let it simmer until the broth becomes fragrant and rich.

When the broth is at a rolling boil, add all the prepared napa cabbage, onion, and green onion. This will allow the natural sweetness and refreshing flavors of the vegetables to infuse into the stew.

To add a spicy kick and enhance the flavor, stir in 1 tablespoon of gochugaru and 1 tablespoon of minced garlic. This combination brings out the characteristic savory and slightly spicy taste of doenjang guk.

With all ingredients added, bring the stew to a boil over high heat. Cooking on high heat initially helps to quickly bring out the flavors of the ingredients.
