Main Ingredients

  • 300g Korean Beef Brisket (Hanwoo Yangji)
  • Glass Noodles (to taste)
  • 2 Eggs
  • A little Green Onion for garnish

Broth Ingredients

  • 7 cups Water (approx. 1.4L)
  • 2 Bay Leaves
  • 5 Whole Peppercorns
  • 1/2 Green Onion (cut into large pieces)

Seasoning (Tablespoon measurement)

  • 2 Tbsp Soy Sauce for Soup (Gukganjang)
  • 1 Tbsp Minced Garlic
  • Salt (to adjust seasoning)
  • Black Pepper (to taste)

Cooking Instructions

First, soak the glass noodles in cold water until softened. It’s best to drain them just before cooking.

Rinse the beef brisket under cold running water for about 30 minutes to remove any blood. This step is crucial for a clean-tasting broth. After soaking, drain the beef well.

In a pot, combine 7 cups of water, 2 bay leaves, 5 whole peppercorns, the roughly chopped half green onion, and the drained beef brisket. Bring to a boil over high heat.

Once the broth starts boiling, skim off any foam or scum that rises to the surface using a spoon. Removing impurities will result in a clearer, richer broth. After skimming, cover the pot, reduce the heat to medium, and simmer for 40 minutes.

After 40 minutes of simmering, remove the cooked beef brisket from the pot. Discard the bay leaves, peppercorns, and green onion used for the broth.

Let the removed beef brisket cool slightly. Then, shred it by hand along the grain or thinly slice it into bite-sized pieces. Be careful not to handle it while it’s too hot, as it might break apart.

Pour the clarified broth back into the cleaned pot and turn the heat to medium. Once the broth is simmering gently, add the shredded beef back into the pot. Stir in 1 tablespoon of minced garlic and 2 tablespoons of soy sauce for soup to season.

After seasoning with soy sauce, taste the broth and adjust the saltiness as needed. Add a pinch of black pepper for extra flavor, if desired.

In a bowl, crack the 2 eggs and add 2 pinches of salt. Whisk them gently until well combined, making sure to break the egg yolks and remove the stringy egg whites for a smoother texture.

While the soup is simmering, slowly drizzle the beaten egg mixture into the boiling broth, creating a circular motion. It’s important NOT to stir the soup after adding the egg; let it cook undisturbed so it forms beautiful, fluffy ribbons.

Once the egg ribbons have cooked and floated to the surface, use a spoon or chopsticks to gently break them into larger, bite-sized pieces. Avoid breaking them too finely, which can make the soup look messy.

Add the soaked glass noodles to the soup, using as much as you prefer. Cook until the noodles become transparent and are tender, allowing them to simmer for a short while longer. Be mindful not to add too many noodles, as they can make the broth cloudy.
