  • 1 can (150g) tuna, drained
  • 3 large eggs
  • 4 slices of bread
  • 1/2 medium onion
  • 1/2 green bell pepper
  • 1/2 medium carrot
  • 2 Tbsp strawberry jam
  • Ketchup, to taste
  • 2 Tbsp cooking oil
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Wash the onion, green bell pepper, and carrot thoroughly. Finely julienne them into small, thin strips. Cutting them thinly will help them cook faster and integrate better into the toast.

Step 2

In a medium bowl, crack the 3 eggs. Add a pinch of salt and a pinch of black pepper. Seasoning the eggs now will help to eliminate any eggy odor and enhance the overall flavor.

Step 3

Add the julienned onion, green bell pepper, and carrot to the bowl with the beaten eggs. Mix them well. It’s best to mix them in advance as the vegetables might release some moisture.

Step 4

Drain the tuna from the can thoroughly using a sieve to remove excess oil. Excess oil can make the toast greasy. Add the drained tuna to the bowl. Using chopsticks or a fork, gently break up the tuna and mix it with the egg and vegetable mixture until well combined.

Step 5

Now, let’s cook the egg mixture. Heat 2 tablespoons of cooking oil in a non-stick skillet over medium-low heat. Once the pan is heated, ladle about half of the tuna and vegetable egg mixture into the pan, forming a thin pancake. Cook until golden brown on both sides. Be careful not to use high heat, as the outside might burn before the inside is cooked. Making thin omelets will ensure they blend well with the toast.

Step 6

Lightly toast the bread slices until golden brown and slightly crispy. You can use a toaster or toast them in a dry pan. Spread about 2 tablespoons of strawberry jam evenly on one side of each of the toasted bread slices. The sweetness of the jam will balance the savory flavors.
