Main Ingredients- 1/2 block soft tofu
- 150g cocktail shrimp
- 1/2 onion
- 1/2 bunch green onion
- 1 can tuna (drained)
- 2 cloves garlic, minced
- 1 egg
Seasoning- 1 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- Pinch of salt
- Pinch of black pepper

Cooking Instructions
Step 1
First, finely mince about 100g of cocktail shrimp after washing and peeling them. (Tip: While tuna and tofu alone are delicious, adding minced shrimp provides a more satisfying texture and richer flavor, making these Tuna Tofu Pancakes truly special!)
Step 2
Next, wrap half a block of tofu in a kitchen towel or cheesecloth and squeeze out as much water as possible. Place the squeezed tofu in a mixing bowl and mash it with a fork or your hands. Add the minced shrimp to the bowl as well.
Step 3
Finely chop the onion. Slice the green onion, using both the white and green parts. Add these prepared vegetables to the mixing bowl.
Step 4
Add the drained canned tuna to the mixing bowl and lightly mix it with the other ingredients.

Add the minced garlic, soy sauce, cooking wine, and a pinch of salt and pepper to your preference. Mix everything thoroughly to combine.

Since we are making these pancakes without flour, it’s crucial to knead the mixture well so it binds together and doesn’t fall apart easily. Knead it thoroughly until it has a good, cohesive texture, similar to kneading dough. (Tip: If the mixture is too wet, you can add a very small amount of breadcrumbs instead of flour.)

Once the mixture is well-kneaded, divide it into 12 portions. Roll each portion into a ball, then flatten it into a patty shape, similar to making ‘donggeurang ttaeng’ (Korean meat patties). Place one of the reserved cocktail shrimp on top of each pancake for decoration.

Now, prepare for frying. Crack one egg into a small bowl and whisk it until smooth.
Step 9
Heat a frying pan over low heat and add a generous amount of olive oil. Dip each shaped Tuna Tofu Pancake patty into the whisked egg, coating both sides evenly. Carefully place them onto the heated pan.
Step 10
Cook over low heat, carefully flipping them 3-4 times. Continue cooking until both sides are golden brown and cooked through. Your delicious and healthy Tuna Tofu Pancakes are ready! Enjoy them while they’re warm.
