Ingredients- 200g Tteokguk rice cakes (garaetteok sliced for soup)
- 15 frozen dumplings
- 1/3 stalk of green onion
- 2 eggs
- 1L water (approx. 4 cups)
- 3 cube-shaped broth packets (anchovy or beef stock)
- 0.5 Tbsp minced garlic
- 2 Tbsp tuna extract (fish sauce or soy sauce can be substituted)
- Generous pinch of black pepper
Cooking Instructions
Step 1
To achieve a wonderfully chewy yet tender texture, soak 200g of tteokguk rice cakes in water for 20 minutes. This step prevents them from becoming hard and allows them to absorb the broth’s flavor beautifully.
Step 2
Prepare the remaining ingredients. Have the 15 frozen dumplings ready. Finely chop 1/3 stalk of green onion. In a separate bowl, lightly beat 2 eggs without any salt – a gentle whisking creates delicate egg ribbons in the soup.
Step 3
Now, let’s make the flavorful broth. Pour 1L of water into a pot and add 3 cube-shaped broth packets. Bring this to a boil over high heat.
Step 4
Once the water is boiling vigorously, add both the soaked rice cakes and the frozen dumplings. Keep the heat on high to prevent the rice cakes from clumping and ensure the dumplings cook evenly.
Step 5
As the rice cakes and dumplings begin to cook, season the soup. Stir in 2 Tbsp of tuna extract for umami and 0.5 Tbsp of minced garlic for added aroma. Since the broth cubes already provide seasoning, taste and add more fish sauce or salt if needed.
Step 6
When the soup is bubbling rapidly and the rice cakes start floating to the surface, slowly drizzle in the beaten eggs in a thin stream around the edges of the pot. Resist the urge to stir immediately; let the egg set and cook into beautiful ribbons.
Step 7
As everything simmers, skim off any foam or impurities that rise to the surface. This will result in a clearer and more appealing broth.
Step 8
Finally, add the chopped green onions and a generous amount of black pepper to your liking. Let it simmer for another moment to allow the flavors to meld, then turn off the heat. Your delicious Tteok Mandu Guk is ready!
Step 9
Your warm, comforting Tteok Mandu Guk, with its wonderfully tender rice cakes and savory dumplings, is now complete. Enjoy!
