Main Ingredients
- 300g Tofu (firm or silken)
- 150g Spam or Luncheon Meat
- 1/2 Onion
- A little Chives or Green Onions (for garnish)
Seasoning Ingredients
- 150ml Water
- 2 Tbsp Cornstarch slurry (2 Tbsp cornstarch + 2 Tbsp water)
- 2 Tbsp Doenjang (Korean soybean paste)
- 0.5 Tbsp Soy Sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Yeondu (Korean soup soy sauce) or clear soy sauce
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- A little Minced Garlic
- 150ml Water
- 2 Tbsp Cornstarch slurry (2 Tbsp cornstarch + 2 Tbsp water)
- 2 Tbsp Doenjang (Korean soybean paste)
- 0.5 Tbsp Soy Sauce
- 1 Tbsp Mirin (or cooking wine)
- 1 Tbsp Yeondu (Korean soup soy sauce) or clear soy sauce
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- A little Minced Garlic
Cooking Instructions
Step 1
First, cut the tofu and ham into bite-sized cubes, about 2cm. This size ensures they absorb the sauce well and are easy to eat. Once cubed, blanch the tofu and ham in boiling water. This step helps remove impurities and some of the oil from the ham, making the dish lighter.
Step 2
Heat about 1 tablespoon of cooking oil in a deep pan or pot over medium-low heat. Add the finely chopped onion and minced garlic, and sauté until fragrant. Cooking the onions until translucent will bring out their natural sweetness, enhancing the overall flavor of the dish.
Step 3
Once the onions are softened and aromatic, pour in 150ml of water. Add the doenjang, making sure to sift it through a fine-mesh sieve to prevent clumps and ensure a smooth sauce. Stir in the soy sauce, mirin, yeondu (or clear soy sauce), and black pepper. Mix everything well.
Step 4
When the sauce mixture begins to simmer, add the blanched tofu and ham. Let them simmer together in the sauce for about 2-3 minutes to allow the flavors to meld. Gradually pour in the cornstarch slurry (made by mixing 2 tablespoons of cornstarch with 2 tablespoons of water), stirring continuously until the sauce reaches your desired thickness.
