An exquisite combination of nutritious eggs and soft tofu! Introducing a smart meal that keeps you full with its low-calorie, high-protein content. You can make it even richer and tastier by using up any leftover vegetables, ham, or fish cakes you have at home.
Main Ingredients- 2-3 large eggs
- 1/2 block firm tofu (approx. 150g)
- Diced ham (optional)
- Diced fish cake (optional)
- 1/4 eggplant
- 1/4 onion
- 1/4 bell pepper (various colors)
- A small amount of broccoli
- A small amount of mushrooms
- Pinch of salt
Cooking Instructions
Step 1
Prepare the Cooking Vessel: Get a microwave-safe silicone steamer or a deep microwave-safe bowl. Place half a block of tofu in the vessel and mash it thoroughly with a spoon or fork until smooth, ensuring there are no large lumps. This helps the tofu blend well with other ingredients and achieve a creamier texture.
Step 2
Mix the Ingredients: Crack 2-3 large eggs into the mashed tofu. Finely chop all the prepared vegetables (eggplant, onion, bell pepper, broccoli, mushrooms, etc.) and optional additions like ham and fish cake, then add them to the bowl. Feel free to use any vegetables you have, but using a variety of colors will make your steamed egg and tofu visually appealing. Lightly season with salt according to your preference. (Adjust salt if your ham or fish cake is already seasoned.)
Step 3
First Microwave Cook: Place the bowl with the mixed ingredients into the microwave and cook for 4-5 minutes. The eggs will begin to set. Once done, carefully remove the bowl and use chopsticks or a spoon to gently stir the entire mixture. This ensures even cooking throughout. Taste and adjust the seasoning if needed, adding a little more salt if necessary.
