Tteokbokki Ingredients

  • 500g Tteokbokki rice cakes
  • 1/2 can Spam (approx. 60g)
  • 1 stalk green onion (approx. 50g)
  • 1/2 onion (approx. 60g)
  • 400ml water
  • Cooking oil, for stir-frying
  • Sesame seeds, a pinch (for garnish)

Tteokbokki Seasoning

  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp minced garlic
  • 2 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy sauce
  • 3 Tbsp Sugar
  • 1 Tbsp Vinegar

Cooking Instructions

Step 1

First, prepare the garlic to add flavor to your tteokbokki. Finely mince about 4-5 cloves of garlic. If you have pre-minced garlic, you can use that instead.

Step 1

Step 2

Peel the onion, wash it thoroughly, and then finely chop it. The sweetness of the onion will naturally blend into the tteokbokki sauce.

Step 2

Step 3

Rinse the Spam under hot water to remove excess grease. Then, place it in a ziplock bag or plastic bag and mash it with your palm. Mashing the Spam this way allows its unique flavor to meld beautifully with the sauce, making it even more delicious.

Step 3

Step 4

Wash the green onion and chop it into bite-sized pieces, including the green parts. Cut them to about one or two finger lengths, then slice them lengthwise in half. This allows the sauce to penetrate better, making them tastier.

Step 4

Step 5

Heat about two drizzles of cooking oil in a frying pan over medium-low heat. Add the mashed Spam and stir-fry until it becomes golden brown and slightly crispy. The oil from the Spam will render out, adding a savory depth.

Step 5

Step 6

Once the Spam is golden brown, add the minced garlic and minced onion. Stir-fry them together until the onion becomes translucent and the garlic becomes fragrant, about 1-2 minutes.

Step 6

Step 7

Add the sugar to the pan with the fried Spam, garlic, and onion. Stir-fry everything together once more. The sugar will melt and balance the flavors of the ingredients.

Step 7

Step 8

Push the fried ingredients to one side of the pan. Pour the soy sauce into the empty space and let it simmer briefly. This helps to bring out the deep flavor of the soy sauce.

Step 8

Step 9

Once the soy sauce starts to simmer, mix it well with the fried ingredients that were pushed aside. Then, add the Gochujang (Korean chili paste) and stir thoroughly to combine it evenly with all the ingredients, creating a smooth sauce.

Step 9

Step 10

After mixing the sauce well, pour in 400ml of water and add the Gochugaru (Korean chili powder). Stir well to dissolve the chili powder, which will add a spicy kick and vibrant color.

Step 10

Step 11

Now, add the pre-cut green onions and the tteokbokki rice cakes to the pan. Finally, add 1 tablespoon of vinegar. Vinegar enhances the savory flavor of the tteokbokki and cuts through any richness.

Step 11

Step 12

Simmer over medium heat for about 5 minutes, or until the rice cakes are cooked and the sauce has thickened to your desired consistency. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pan. Sprinkle with sesame seeds for a final touch before serving. Enjoy your delicious Spam Tteokbokki!
