Hearty and Delicious Seafood Nurungji Soup
Easy Homemade Seafood Nurungji Soup Recipe for a Cozy Meal
Today, I’m excited to share a recipe for a comforting Seafood Nurungji Soup, made with crispy rice crust (nurungji) I received from my mother! I recently craved this dish and went to a popular restaurant, but unfortunately, it was closed due to COVID-19. So, I decided to make it at home! This soup is a perfect blend of savory seafood and satisfyingly crunchy rice crust. Let’s get started!
Main Ingredients
- Crispy Nurungji (scorched rice crust)
- 1 bag frozen mixed seafood (shrimp, squid, mussels, etc.)
- 1 medium onion
- 2 small cuttlefish (or squid)
- 1 cup (200ml) water
- 2 cups (soju cup measure, approx. 200ml) Korean soup soy sauce (Guk-ganjang)
- 1 Tbsp sugar
- Cooking oil, for stir-frying
- Sesame oil, for finishing
- Salt, to taste
Cooking Instructions
Step 1
First, wash the 2 cuttlefish thoroughly under running water. Briefly blanch them in boiling water for about a minute. This step helps to remove any fishy odor and makes the cuttlefish tender.
Step 2
Heat a little cooking oil in a deep pan or pot over medium heat. Add the thawed mixed seafood and stir-fry until the moisture evaporates and it becomes fragrant.
Step 3
Peel the onion and slice it thinly or chop it. Add the prepared onion to the pan with the seafood and stir-fry until the onion becomes translucent. The natural sweetness of the onion will enhance the soup’s flavor.
Step 4
Pour 1 cup (200ml) of water into the pan, enough to cover about two-thirds of the ingredients. Add 2 cups of Korean soup soy sauce (measured with a soju cup) and 1 tablespoon of sugar. Bring the mixture to a boil over high heat.
Step 5
Once the soup is boiling, add the crispy nurungji. The nurungji will start to absorb the broth and soften. As it cooks, add a little more water if needed to maintain your desired consistency. Taste the soup and add a pinch of salt if it needs more seasoning. Finally, just before serving, drizzle in a little sesame oil for extra aroma and flavor. Your delicious Seafood Nurungji Soup is ready!
