Here is my recipe for a delicious Pumpkin Corn Eggslut that I made this week. It’s a perfect light and healthy snack or meal!

Ingredients

  • 1 medium pumpkin
  • Approx. 1/2 cup canned corn kernels
  • 1 large egg
  • Pinch of salt
  • Pinch of black pepper
  • 1 slice processed cheese

Cooking Instructions

First, wash the pumpkin thoroughly. Then, cut off the top quarter of the pumpkin to create a lid. Place the cut pumpkin halves in a microwave-safe dish and microwave for about 7 minutes. This softens the pumpkin, making it easier to remove the seeds and scoop out the flesh.

Carefully remove the cooked pumpkin from the microwave. Using a spoon, gently scrape out and discard the seeds and any fibrous parts from the inside of the pumpkin. It’s best to scoop it out so the inside is clean.

Now, carefully crack 1 egg into the hollowed-out pumpkin cavity. Try not to break the yolk as you crack it. Once the egg is in, use a fork to lightly break the yolk. Breaking the yolk helps it mix better with other ingredients and ensures even cooking.

Season the egg with a pinch of salt and pepper. Sprinkle the canned corn kernels evenly over the egg. Next, tear the slice of processed cheese into pieces and scatter them over the corn. Place the pumpkin lid back on top. Put the stuffed pumpkin into your air fryer basket and cook at 180°C (350°F) for 9 minutes. Cooking time may vary slightly depending on your air fryer model.

After the cooking time is up, carefully remove the pumpkin from the air fryer. Open the lid and check if the egg is fully cooked. If the top of the egg appears undercooked, you can cover the pumpkin again (with the lid or plastic wrap) and microwave for about 3 more minutes. Adjust the microwave time based on its power.
