Step 1
First, prepare the main ingredients: potato, onion, and bell pepper. Wash them thoroughly. Peel the potato if desired, or wash it well. Remove the seeds from the onion and bell pepper. Dice all the vegetables into small cubes, about 0.5 cm on each side, slightly smaller than bite-sized. Cutting them this small ensures they cook evenly and have a pleasant texture.
Step 2
Heat a pan over medium heat and add a little olive oil. Add the diced potato, onion, and bell pepper, and sauté until the vegetables are tender and the potato becomes translucent. This process helps to soften the vegetables before adding them to the egg mixture. Transfer the sautéed vegetables to a separate bowl and let them cool slightly. Cooling them prevents the eggs from cooking prematurely when mixed.
