For the Salad- 2 medium potatoes
- 1 medium sweet potato
- 1 teaspoon salt (for boiling potatoes and sweet potatoes)
- 1/2 onion
- 1/2 carrot
- 3 tablespoons mayonnaise (or adjust to taste)
- A suitable amount of black olives (honey-glazed, optional)
- Pinch of black pepper
- 1-2 hard-boiled eggs (optional ingredient)

Step 1
First, prepare the onion to make the salad’s flavor clean. Finely mince the onion. Place the minced onion in 1/4 cup of cold water mixed with 1 tablespoon of vinegar (or lemon juice) and soak for about 5 minutes to remove its pungency. Then, drain it thoroughly in a sieve.
Step 2
Finely dice the carrot, similar to the onion. It adds a slight sweetness and a crisp texture. You can mince it very finely or dice it into small cubes according to your preference. You can lightly salt it to soften it before use, or for a softer texture, lightly sauté it in a pan with a little butter or oil.

Wash the potatoes and sweet potato thoroughly. Place them in a pot with enough water to cover and add 1 teaspoon of salt. Boil for about 15-20 minutes for potatoes and 10-15 minutes for sweet potatoes, or until tender when pierced with a fork. While still hot, peel them (do not rinse with cold water) and place them in a large bowl. Mash them using a fork or a potato masher.

While still warm, add the prepared minced onion and carrot to the mashed potatoes and sweet potato. If you have hard-boiled eggs, mash them and add them for an even more satisfying and delicious salad. However, eggs are optional. You can mash the eggs directly into the salad bowl or cut them in half and place them on top of the salad.
