Hearty and Delicious Inari Sushi Salad with Spicy-Sweet Gochujang Sauce
Inari Sushi Salad: A Wholesome Rice and Vegetable Bowl (Served with Gochujang Sauce)
This is a satisfying rice salad prepared for my children’s breakfast. It’s a nutritious and flavorful dish perfect for busy mornings.
Main Ingredients- Cooked Rice (using brown rice with beans adds extra health benefits)
- Pre-seasoned Fried Tofu Pockets (includes seasoning for the rice)
- Boiled Quail Eggs
- Fresh Cucumber
- Ripe Tomatoes
- Tender Baby Leafy Greens
Spicy-Sweet Gochujang Sauce- 1/2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Mayonnaise
- 1 Tbsp Vinegar
- 1 Tbsp Plum Extract (Maesil-cheong)
- A pinch of Ground Perilla Seeds

Cooking Instructions
Step 1
First, prepare the fresh vegetables for the salad. Peel the boiled quail eggs and cut them into bite-sized pieces. Wash the baby leafy greens thoroughly and pat them dry. Wash the cucumber and tomatoes under running water and chop them into your desired size (cubed or sliced). Feel free to use other vegetables you have in your refrigerator.
Step 2
Let’s make delicious inari sushi. In a bowl, mix the cooked rice with the seasoning sauce from the pre-seasoned fried tofu pockets until evenly coated. Carefully fill the seasoned tofu pockets with the rice mixture, pressing gently to form inari sushi. Cut the prepared inari sushi in half for easier eating.
Step 3
Now, let’s make the spicy-sweet gochujang sauce to enhance the salad’s flavor. In a small bowl, combine 1/2 Tbsp gochujang, 1 Tbsp mayonnaise, 1 Tbsp vinegar, and 1 Tbsp plum extract. Whisk until smooth. You can adjust the sweetness by adding a little honey or sugar to your preference, or substitute with your favorite dressing.
Step 4
Once all ingredients are ready, arrange them attractively on a large salad plate. Place the baby leafy greens, sliced cucumber, tomatoes, quail eggs, and the halved inari sushi. Arranging them with consideration for color and shape will make the salad look even more appetizing.
Step 5
Finally, it’s time to add the sauce. Using a sauce bottle or a spoon, drizzle the prepared gochujang sauce over the salad appealingly. Sprinkle a bit of ground perilla seeds on top for a nutty aroma and visual appeal. Your beautiful Inari Sushi Salad is now complete! Enjoy your meal.
