Main Ingredients

  • 450g Chewy Sundae (Korean blood sausage)
  • 1 pack ready-made Seolleongtang (beef bone broth, approx. 1000ml)
  • Generous amount of fresh chives
  • 1 red chili pepper
  • 1 green chili pepper (or 2 for more heat)
  • 1 green onion (mostly white parts, chopped generously)

Seasoning

  • Pinch of ground black pepper
  • Salt or soy sauce (to taste)
  • 1.5 Tbsp salted shrimp (for broth seasoning)

First, prepare all the vegetables that are key to the flavor of Sundae Guk. Wash and chop the chives into approximately 2-inch lengths. Remove the seeds from the red and green chili peppers and slice them thinly on the diagonal. Chop the green onion into large, 2-inch pieces. If you prefer a spicier soup, feel free to add an extra green chili pepper.

Cut the sundae into bite-sized pieces, about 2cm thick. You can briefly blanch the sundae in boiling water for a chewier texture. Pour one pack of ready-made Seolleongtang (beef bone broth) into a pot and add the prepared sundae.

While the sundae is cooking, let’s make the delicious spicy paste! In a bowl, combine 3 Tbsp of gochugaru, 3 Tbsp of Seolleongtang broth, 2 Tbsp of minced garlic, and 2 Tbsp of Cheongju (rice wine). Mix thoroughly with a spoon until all the ingredients are well combined. Letting the gochugaru soak in the broth for a bit will deepen the flavor.

Once the Seolleongtang and sundae start to boil, add the chopped green onion, green chili pepper, and red chili pepper. Taste the broth and gradually add about 1.5 Tbsp of salted shrimp to adjust the seasoning. Using salted shrimp will make the broth more refreshing and rich. You can also add soy sauce or salt to your preference.

Finally, it’s time to add the chives. Chives can become soggy if overcooked, so add them generously right before turning off the heat, or after the heat is off. Just lightly mix them in until they slightly wilt to maintain their crisp texture and fresh aroma.

Serve the hot Seolleongtang Sundae Guk generously in bowls. Top with plenty of the prepared spicy paste according to your preference, and enjoy it by mixing in a bowl of rice. The combination of the spicy paste and the rich Seolleongtang broth is heavenly.
