Easy and Simple Fish Cake Udon Recipe
This recipe allows you to easily enjoy delicious fish cake udon at home, just like at a restaurant. The chewy udon noodles, bouncy fish cakes, and deep, savory broth create a perfect harmony. It’s a wonderfully satisfying meal to warm you up on a chilly day!
Main Ingredients- 900ml Broth (store-bought or homemade dashi)
- 300g Fish Cakes (square or rolled)
- 2 Servings Fresh Udon Noodles (approx. 460g)
Cooking Instructions
Step 1
Pour 900ml of your prepared broth into a pot and bring it to a boil over high heat. Using store-bought broth is convenient, or you can make your own with kombu and anchovies for a richer flavor.
Step 2
Once the broth is boiling vigorously, add the 2 servings (approx. 460g) of udon noodles. Fresh udon noodles have a wonderfully chewy texture that makes the dish even better.
Step 3
Gently loosen the udon noodles to prevent them from sticking together. Before the noodles are fully cooked, add the 300g of fish cakes. You can cut the fish cakes into bite-sized pieces.
Step 4
Add 1 tablespoon of regular soy sauce (Jin-ganjang) to enhance the umami of the broth. Soy sauce helps to balance the overall flavor.
Step 5
Add another 1 tablespoon of soup soy sauce (Guk-ganjang) for a deeper, clearer flavor. Guk-ganjang adds a rich dimension to the soup base.
Step 6
Add 1 tablespoon of mirin (or cooking sake) to remove any unwanted odors and add a subtle sweetness and depth. Even if you’re sensitive to alcohol, the flavor from mirin is minimal and generally undetectable.
Step 7
Finally, add about 0.2 teaspoons of black pepper to further enhance the broth’s aroma and flavor. You can adjust this to your preference.
Step 8
Cook until the udon noodles reach your desired level of doneness. Be careful not to overcook, as they can become mushy. Refer to the package instructions or check the noodles’ texture as they cook.
Step 9
Ladle the udon and broth into a nice bowl. Garnish generously with a handful of fresh crown daisy. Your delicious fish cake udon is now complete! Enjoy it while it’s hot.
