Hearty and Delicious Fish Cake and Mushroom Stir-fry (Duruchigi)

This is a stir-fried dish made by adding chewy fish cakes to Baek Jong-won’s signature King Oyster Mushroom Duruchigi recipe, making it even richer and more satisfying. It’s a spicy and sweet dish that perfectly complements rice as a side dish or makes for a hearty rice bowl. Complete a wonderful meal with simple ingredients!
Main Ingredients- 1 pack King Oyster Mushrooms (approx. 200g)
- 2 sheets flat fish cakes (Eomuk)
- 1/2 medium onion
- 1/2 stalk green onion
- 1 Korean chili pepper (optional)
- Cooking oil, as needed
Baek Jong-won’s Seasoning- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Jin Ganjang (Korean soy sauce)
- 1 Tbsp Sugar
- Pinch of Black Pepper (a few grinds)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Sesame seeds, a sprinkle
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Gochujang (Korean chili paste)
- 3 Tbsp Jin Ganjang (Korean soy sauce)
- 1 Tbsp Sugar
- Pinch of Black Pepper (a few grinds)
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Sesame seeds, a sprinkle
Cooking Instructions
Step 1
First, carefully trim off the dirty ends of the King Oyster Mushrooms with a knife. Then, tear them into bite-sized pieces by hand. Rinse them lightly under running water and shake off excess moisture. If there’s too much water, the stir-fry can become mushy, so gently patting them dry with paper towels will help.
Step 2
Place the flat fish cakes in a colander and pour hot water over them to rinse off excess oil. This removes the fishy taste and makes them cleaner. Then, rinse them once more in cold water. Slice them into strips about 0.5 cm thick using a knife or mandoline. Long strips, similar to those used for kimbap, offer a nice texture.
Step 3
Peel the onion and slice it into strips about 0.5 cm thick. Slice the green onion (both white and green parts) into pieces about 0.5 cm apart. If you want a spicier dish, chop the Korean chili pepper. Mince the garlic in advance for easier cooking.
Step 4
In a large bowl, combine the prepared King Oyster Mushrooms and sliced onion. Add all the seasoning ingredients: 3 Tbsp Jin Ganjang, 2 Tbsp Gochugaru, 1 Tbsp Gochujang, 1 Tbsp Sugar, a pinch of black pepper, and 1 Tbsp minced garlic. It’s easier to mix if you add the seasonings directly onto the ingredients rather than pre-mixing them.
Step 5
Put on disposable gloves and gently mix everything together by hand until the seasonings are evenly distributed. Be careful not to knead too hard, as this can break down the mushrooms. Gently toss to ensure the seasoning coats the ingredients well.
Step 6
Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced green onions and sauté over low heat until the green onion aroma is fully infused into the oil, creating ‘green onion oil.’ This slow sautéing is key to developing a deeper flavor.
Step 7
Once the green onion is fragrant, add the sliced fish cakes to the pan and increase the heat to medium-low. Stir-fry them together until the fish cakes are lightly golden. This will make them chewier.
Step 8
Now, add the seasoned King Oyster Mushrooms and onions to the pan. Continue to stir-fry over medium-low heat. The moisture released from the mushrooms will help combine everything with the other ingredients.
Step 9
Stir-fry until the King Oyster Mushrooms are slightly wilted and tender. Then, add the chopped Korean chili pepper for a spicy kick and stir gently to combine. Avoid overcooking, as the mushrooms can become mushy.
Step 10
Finally, just before turning off the heat, stir in 1 Tbsp of sesame oil and a sprinkle of sesame seeds. Adding sesame oil at the end preserves its aromatic flavor. Give it one last gentle stir to ensure all ingredients and seasonings are well combined.
