On a day like today, why not enjoy a warm and comforting bowl of ‘Dubu Jeongol’? This Korean tofu hot pot is perfect for gathering the family around the table for a hearty meal, featuring soft tofu, crisp vegetables, and a flavorful broth. I’ve added potatoes because I love them! Since it’s a tofu hot pot, feel free to be flexible with the vegetables you have in your fridge – the key is plenty of delicious tofu! ^^

Main Ingredients

  • 1 block Firm Tofu (approx. 300g)
  • 1-2 Potatoes (medium size)
  • 1/4 Zucchini
  • 1 Onion (medium size)
  • 1 stalk Green Onion (scallion)
  • 1 Korean Green Chili (optional, for extra spice)

Seasoning & Broth

  • 3 Tbsp Soy Sauce
  • 1-2 Tbsp Salted Shrimp (for umami)
  • 2 Tbsp Cooking Wine (Mirin)
  • 2 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 1/2 Tbsp Sugar (adjust sweetness)
  • 1 Tbsp Minced Garlic
  • 1/2 tsp Minced Ginger
  • Pinch of Black Pepper
  • 4-5 cups Anchovy-Kelp Broth (approx. 800ml-1000ml)

Cooking Instructions

First, prepare the tofu and vegetables by slicing them into bite-sized pieces. Slice the tofu into rectangular pieces about 1 to 1.5cm thick, roughly 4x5cm. Cut the potatoes and zucchini into half-moon shapes. Slice the onion into thick strips. Chop the green onion diagonally.

Pour the anchovy-kelp broth into a pot. Add the firmer vegetables first, as they take longer to cook, and bring to a boil. Once the potatoes start to soften slightly, add the zucchini and onion. (Tip: For a quicker preparation, you can add all the vegetables at once!)

Once the broth is simmering, stir in the prepared seasoning mixture to infuse the broth with flavor. The salted shrimp adds a wonderful depth and savory taste to the broth.

When the vegetables are almost cooked through, carefully add the tofu slices, green onions, and Korean green chilies (if using). Gently place them in the pot to prevent the tofu from breaking apart.

Let the hot pot simmer for another 4-5 minutes, allowing the flavors to meld together and the tofu to absorb the delicious broth. Once the tofu is well-seasoned, your Dubu Jeongol is ready! Serve immediately while piping hot for the best experience.
