Seasoning Ingredients- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp spicy gochugaru (adjust to taste)
- 1 Tbsp sugar
- 2 Tbsp soy sauce (regular or soup soy sauce)
- 1 Tbsp oyster sauce
- 0.5 Tbsp fish sauce (for enhanced umami!)
- 1 Tbsp cooking oil (for sautéing vegetables)
- 1 Tbsp Dasida or chicken stock (for depth of flavor)
- Pinch of black pepper
- 2 Tbsp sesame oil (for finishing aroma)
- 2 Tbsp gochugaru (Korean chili flakes)
- 0.5 Tbsp spicy gochugaru (adjust to taste)
- 1 Tbsp sugar
- 2 Tbsp soy sauce (regular or soup soy sauce)
- 1 Tbsp oyster sauce
- 0.5 Tbsp fish sauce (for enhanced umami!)
- 1 Tbsp cooking oil (for sautéing vegetables)
- 1 Tbsp Dasida or chicken stock (for depth of flavor)
- Pinch of black pepper
- 2 Tbsp sesame oil (for finishing aroma)
Cooking Instructions
Step 1
Cut the tofu into bite-sized pieces, similar in size to the donggeurangttaeng (about 2-3cm squares). Slicethe onion into thick strips and diagonally slice the green onion.
Step 2
Line the bottom of a wide pot with the sliced onions. The onions will soften and release a natural sweetness, contributing to a refreshing broth.
Step 3
Arrange the cut tofu, donggeurangttaeng, (optional: enoki mushrooms or other vegetables), and sliced green onions attractively over the onions. The colorful ingredients will make the hot pot visually appealing.
Step 4
In a separate bowl, combine the gochugaru, spicy gochugaru, sugar, soy sauce, oyster sauce, fish sauce, Dasida, and black pepper. Mix well to create the seasoning paste, then evenly sprinkle it over the ingredients in the pot.
Step 5
Pour water into the pot until the ingredients are about one-third submerged. Adding too much water can dilute the flavor. Place the pot over medium heat and cover with a lid, bringing it to a boil.
Step 6
Once the hot pot begins to boil, reduce the heat to medium-low and continue to simmer for about 10 minutes to allow the ingredients to cook through. Finally, add 1 tablespoon of minced garlic and simmer for another 2 minutes to infuse the broth with garlic aroma.
Step 7
The completed Donggeurangttaeng Tofu Hot Pot is typically flavorful without being too salty or strong. However, if you prefer a saltier taste, you can adjust the seasoning by adding a little more soy sauce, salt, or a store-bought hot pot seasoning sauce. Drizzle 1-2 tablespoons of sesame oil at the end for an extra layer of fragrant flavor.
