  • 6 dill pickle slices
  • 8 mini buns (morning rolls)

First, wash the 2 potatoes thoroughly and peel them. Cut the peeled potatoes into manageable pieces. You can steam them or place them in a microwave-safe bowl, cover with plastic wrap, and poke a few holes with a fork. Microwave on high for about 7-10 minutes, or until the potatoes are tender enough to be easily pierced with a fork. Be cautious when removing them as they will be hot.

While the potatoes are cooking, prepare the other ingredients. Finely mince the 1/2 onion. Minced very finely will prevent large chunks. Dice the 6 dill pickle slices to a similar size as the minced onion. Unpack the 100g of imitation crab meat and gently shred it along the grain. Shredding it into manageable pieces rather than finely chopping will enhance the texture.

While the potatoes are still hot, mash them until smooth using a fork or a potato masher. It’s okay if there are a few small lumps. In a bowl, combine the mashed potatoes with the prepared minced onion, diced pickles, and shredded imitation crab meat. Add the sauce ingredients: 4 Tbsp mayonnaise, 1.5 Tbsp sugar, 1 Tbsp mustard, a pinch of salt, and a pinch of black pepper. Mix everything thoroughly until well combined. Taste and adjust seasoning by adding more salt if needed, or more sugar for sweetness, according to your preference.

Prepare the 8 mini buns. Using a serrated knife, carefully cut a slit about 1 cm deep into the top or side of each bun, being careful not to cut all the way through. Gently fill the opened buns generously with the prepared potato and crab mixture. Be mindful not to overfill, which could cause the buns to break.
