Hearty and Delicious Chicken Inari Sushi
Quick & Easy Lunch/Snack Idea Using Leftover Chicken
We often buy delicious fried chicken, about once a week, because it’s so satisfying for the price. However, sometimes there are leftovers, especially chicken legs! This recipe is perfect for transforming those leftover chicken pieces into a delightful and filling lunch or a special snack for kids. It’s a wonderful fusion of sweet and savory inari sushi with a kick from the chicken, making it a hit with both children and adults. It’s a simple yet impressive meal solution!
Main Ingredients- 14 seasoned fried tofu pouches (inari age)
- 4 pieces of seasoned fried chicken (meat only, deboned)
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1/4 onion
- 2 cups cooked rice
- 1 Tbsp toasted sesame seeds
- 1/2 Tbsp sesame oil
Cooking Instructions
Step 1
First, place the 14 seasoned fried tofu pouches (inari age) in a sieve and gently press out the excess liquid. This helps prevent the pouches from tearing and allows them to absorb the flavors better, making them more delicious.
Step 2
Debone the leftover chicken and remove the skin, keeping only the meat. The meat from 4 pieces should be a generous amount.
Step 3
Using kitchen scissors, finely chop the deboned chicken meat into bite-sized pieces. This makes it easier to stuff into the tofu pouches.
Step 4
Prepare the green, red, and yellow bell peppers and 1/4 onion. Their vibrant colors will make the inari sushi look even more appealing.
Step 5
Wash the prepared bell peppers and onion thoroughly, then mince them finely. Finely diced vegetables blend well with the chicken and rice, offering a pleasant texture.
Step 6
Heat a pan over medium heat. Add the chopped chicken and stir-fry with 1 Tbsp ketchup and 1/2 Tbsp hot sauce, ensuring it doesn’t burn. This will revive the chicken’s original delicious seasoning and add a sweet and spicy aroma.
Step 7
Once the chicken is lightly stir-fried, add the minced bell peppers and onion. Continue to cook until the vegetables are slightly tender. Season with 1/4 tsp herb salt to balance the flavors, then remove from heat and let it cool slightly.
Step 8
In a bowl, combine 2 cups of warm cooked rice, 1 Tbsp toasted sesame seeds, and 1/2 Tbsp sesame oil. Gently mix everything together with a spatula or rice paddle until well combined, being careful not to mash the rice grains.
Step 9
Carefully fill each drained tofu pouch with the seasoned rice mixture. Gently shape the pouches with your hands to create a neat, well-filled inari sushi. Your hearty chicken inari sushi is now complete!
