  • 500g dried chickpeas

Seasoning Ingredients

  • 400ml soy sauce
  • 400ml water
  • 100ml oligosaccharide
  • 3 Tbsp plum extract
  • 3 Tbsp sugar
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

Step 1

The first step to making delicious braised chickpeas! Rinse the dried chickpeas thoroughly, place them in a bowl, and cover with plenty of water. Soak the chickpeas for at least 6 hours, or preferably overnight. Ensure they have enough time to swell and soften.

Transfer the soaked chickpeas to a pot and add enough water to fully submerge them. Bring to a boil over high heat, then reduce to medium-low heat and simmer for at least 30 minutes, or until the chickpeas are tender. They are ready when they are soft enough to be easily mashed. The cooked chickpeas are delicious on their own and make a great healthy snack for dieting.

Now, let’s get to the braising! Drain the cooked chickpeas and place them in the pot. Add the soy sauce (400ml), water (400ml), oligosaccharide (100ml), sugar (3 Tbsp), and plum extract (3 Tbsp). Bring to a boil over high heat, then reduce to medium-low heat and let it simmer slowly, allowing the flavors to penetrate the chickpeas. Taste and if you prefer a saltier taste, add a little more soy sauce to adjust to your preference. Continue to simmer for about 20-30 minutes until the sauce has reduced and thickened.

Once the sauce has reduced to your desired consistency and the chickpeas look glossy, turn off the heat. Finally, sprinkle with sesame seeds for an added nutty aroma and flavor. Transfer the finished braised chickpeas to a serving dish. They make a wonderful side dish! Let them cool before storing in an airtight container in the refrigerator for enjoying over the next few days.
