Nutritious Beef and Rice Cake Soup (Tteokguk)
This Tteokguk is a satisfying and wholesome meal, featuring a rich and savory beef bone broth base, chewy rice cakes, tender beef, and a delicate egg garnish. Perfect for using up frozen rice cakes and beef, it’s a comforting dish that’s easy to make.
Main Ingredients- Tteokguk tteok (rice cakes for soup) 1 bowl (approx. 300g)
- Frozen beef (for soup) 500g
- Store-bought beef bone broth (Sagol Guk) 800ml
- Eggs 2
Seasoning & Garnish- Soup soy sauce (Guk-ganjang) 1 Tbsp
- Salt 1/3 Tbsp (adjust to taste)
- Chopped green onion 2 Tbsp (for garnish)
- Sesame oil, a little (optional)
- Black pepper, a little (optional)

Cooking Instructions
Step 1
Rinse the tteokguk tteok (rice cakes) under cold water and let them soak for about 30 minutes. This helps prevent them from sticking together and ensures a softer, chewier texture when cooked. Drain the soaked rice cakes in a colander.
Step 2
Pat the beef dry with paper towels to remove any excess blood. Cut the beef into bite-sized pieces. (If using frozen beef, thaw it first before proceeding.)
Step 3
In a pot, pour in the 800ml of store-bought beef bone broth and bring it to a boil over medium heat. Once the broth is simmering, add the prepared beef. Cook until the beef is fully cooked through. Skim off any foam that rises to the surface to ensure a clear and clean broth.
Step 4
When the beef is cooked, add the drained tteokguk tteok to the pot. Continue to simmer until the rice cakes are tender and the soup has thickened slightly. Stir occasionally to prevent the rice cakes from sticking to the bottom of the pot.
Step 5
Once the rice cakes are cooked, stir in the chopped green onions. Crack the two eggs into a separate bowl, lightly beat them, and then slowly drizzle them into the simmering soup in a circular motion. As the egg begins to cook, you can gently stir it to create ribbons, or let it set like a thin omelet. Season the soup with 1 Tbsp of soup soy sauce. Adjust the overall seasoning with 1/3 Tbsp of salt, or to your preference. A little black pepper or sesame oil can also be added at this stage for extra flavor.
Step 6
Once the tteokguk is perfectly cooked and seasoned, turn off the heat. Ladle the hot soup into individual bowls and serve immediately. Enjoy your warm and delicious Tteokguk!
