  • 1 medium carrot (approx. 100g)
  • 1 medium onion (approx. 150g)
  • 200ml fresh milk
  • 300g beef (brisket or chuck)
  • 110g solid curry roux block (choose your favorite flavor)
  • 10g butter for added richness
  • 700ml water

Cooking Instructions

Step 1

First, thoroughly wash the potatoes and carrots, then peel them. Dice them into approximately 2-3cm cubes for a satisfying bite. Cutting them too small might cause them to break down during cooking, so aim for a consistent, medium size.

Step 2

Ensuring that all your ingredients, including the potatoes, carrots, and beef, are cut into uniform sizes will contribute to a more visually appealing and evenly cooked dish. This uniformity helps everything cook at the same rate.

Step 3

Peel the onion, wash it well, and slice it into approximately 0.5cm thick strips. Sliced onions play a crucial role in adding natural sweetness and depth of flavor to the curry.

Step 4

Melt the butter in a deep pan or pot over medium heat. Once the butter is shimmering, add the beef and stir-fry just until the pink color disappears. Avoid overcooking at this stage, as it can make the beef tough. Transfer the seared beef to a plate and set aside.

Step 5

In the same pan used for the beef, add the sliced onions. Cook over medium-low heat, stirring frequently, until they become soft and translucent, then continue to cook them until they caramelize into a beautiful golden-brown color. This process is key to developing a deep sweetness. If the pan becomes too dry, add a little water at a time and continue sautéing for 10-20 minutes, stirring patiently to achieve this caramelization.

Step 6

Add the diced potatoes, carrots, and the set-aside beef to the caramelized onions. Stir everything together. Pour in the 700ml of water and bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer gently for about 20-30 minutes, or until the vegetables are tender.

Step 7

Check if the vegetables are tender. Then, reduce the heat to low and add the curry roux block. Stir continuously with a spatula or ladle to ensure the curry dissolves completely and doesn’t stick to the bottom of the pot. Be careful to prevent it from burning.

Step 8

As the curry begins to thicken, slowly pour in the fresh milk. Adding milk will make the curry wonderfully creamy and rich in flavor. Continue to stir and simmer for about 5 more minutes after adding the milk. Once you’ve confirmed the vegetables are perfectly cooked, turn off the heat.

Step 9
