Hearty and Aromatic Curry Rice
Soft Potatoes and Rich Curry Aroma ~ Curry Rice ~
Do you have potatoes at home? Let’s make some delicious curry rice! I was out of meat, so I quickly paired it with some tonkatsu, but the curry itself was so flavorful that I finished a whole bowl of rice! I made the curry with a strong aroma, but if you can’t eat spicy food, you can dilute it with water or milk to make it milder.
Main Ingredients- 3 Potatoes (medium-sized)
- 1/2 Carrot
- 1/2 Onion
- 3cm piece Zucchini
- 1/2 Cabbage leaf
- 2 Shiitake mushrooms

Cooking Instructions
Step 1
First, wash and prepare all the vegetables for the curry. Peel the potatoes, carrot, and onion, then dice them into approximately 2cm cubes. Remove the stems from the shiitake mushrooms and slice them thinly or quarter them. Cut the cabbage into similar-sized pieces. Cutting the vegetables into uniform sizes ensures they cook evenly.
Step 2
In a pot, add the diced potatoes and water (or a piece of kelp for broth). Bring to a boil over high heat. Using kelp broth will add a deeper, richer umami flavor. Once the water boils, reduce the heat to medium and simmer until the potatoes are about halfway cooked.
Step 3
Once the potatoes are partially cooked, add the diced carrots and continue to boil for about 5 more minutes. Then, add the prepared mushrooms, zucchini, cabbage, and onion. Cook until the vegetables are tender, about 10-15 more minutes. You can adjust the order of adding vegetables based on their cooking times.
Step 4
To the simmering vegetable broth, add 6 tablespoons of curry powder. It’s important to dissolve the curry powder by gradually adding a little water (or kelp broth) at a time to prevent lumps. Check if the potatoes are cooked by piercing them with a chopstick or fork; they should be tender.
Step 5
After dissolving the curry powder, gently stir with a spatula or ladle to ensure all the powder is well combined with the broth and there are no clumps. Once the curry begins to thicken, reduce the heat to low and simmer for another 2-3 minutes to enhance the curry’s flavor.
Step 6
Serve the delicious curry rice generously over warm steamed rice. For an even more satisfying meal, consider adding a fried egg, tonkatsu, or a side salad according to your preference.
