Today, I’ve prepared a super simple Seolleongtang recipe that brings that deep, rich restaurant flavor right into your home. This magical recipe is so easy, you’ll finish two bowls of rice in no time! Alright, shall we get started on making some delicious Seolleongtang? Let’s dive in!
Large Batch Ingredients (Serves 60)- Beef Brisket 3kg (Soaking to remove blood is essential!)
- 1 large Onion (cut into large pieces)
- 3 Green Onions (cut lengthwise)
- 200g Coarse Salt (for seasoning)
- 100g Black Pepper (for flavor)
- 500g Ready-made Ox Bone Broth Concentrate (The secret to deep broth flavor!)
- 200g Thin Wheat Noodles (Somen – quantity adjustable to your preference)
Cooking Instructions
Step 1
First, soak the 3kg of beef brisket in cold water to remove any blood. About 2-3 hours should be sufficient. Once the blood is completely removed, place the brisket in a large pot with plenty of cold water and boil it thoroughly to create a clear, rich broth. This step will also tenderize the beef.
Step 2
Carefully remove the boiled brisket and the onion and green onion (which will be removed later) from the broth after the first boiling. Now, pour the entire 500g of ready-made ox bone broth concentrate into the clear broth. Once the broth comes to a boil again, season it with 200g of coarse salt and 100g of black pepper. Taste and adjust the saltiness as needed.
Step 3
As the broth starts to boil vigorously, skim off any foam or impurities that rise to the surface. This will ensure a clear and clean soup. Add the 1 large onion (cut into large pieces) and 3 green onions (cut lengthwise) to the clarified broth. Cover the pot and let it simmer gently for about 1 to 1.5 hours, allowing the sweetness and aroma of the vegetables to infuse into the broth.
Step 4
Slice the brisket that you set aside earlier into bite-sized pieces. It will be difficult to slice if it’s completely cold, so let it cool down slightly before slicing it thinly and uniformly. Slicing it this way will make it tender when added to the soup.
Step 5
We also need to prepare the somen noodles, an essential part of Seolleongtang! Bring a generous pot of water to a boil and add 200g of somen noodles. Stir gently with chopsticks to prevent sticking. Each time the water starts to boil over, add a little cold water. Repeat this process about 3 times until the noodles are perfectly cooked and chewy. Once cooked, drain the noodles and rinse them under cold water, rubbing them gently to make them even more springy.
Step 6
Now, place a serving of the prepared somen noodles into a bowl. Arrange the thinly sliced brisket pieces attractively on top. Finally, ladle the hot Seolleongtang broth generously over everything. And there you have it – a hearty Seolleongtang with a deep, rich flavor, all made right in your own kitchen!
