Heartwarming Sweet Potato and Mushroom Rice
Microwave ‘Instant Rice’ Style: Sweet Potato Mushroom Rice and Plain White Rice Recipe
No rice cooker? No problem! You can make a 1-2 serving portion of rice in the microwave. Even better, you can create nutritious sweet potato rice this way too.
Sweet Potato Mushroom Rice- 1/2 paper cup white rice (approx. 50g)
- 1 paper cup water (approx. 180ml)
- 1/2 medium sweet potato
- Assorted mushrooms (shiitake, oyster, etc.), as needed
- 1 piece kombu (approx. 5x5cm)
- 2 tsp soy sauce
Plain White Rice- 4/5 paper cup white rice (approx. 80g)

Cooking Instructions
Step 1
First, wash the white rice thoroughly and let it soak for at least 30 minutes. While the rice is soaking, you can prepare the other ingredients to save time.
Step 2
Peel the sweet potato and cut it into bite-sized cubes. Trim the stems from the mushrooms and slice them to a manageable size. In a microwave-safe container, combine the soaked rice and soy sauce, mixing well. Then, add the cubed sweet potato, sliced mushrooms, and the piece of kombu. Pour in 1 paper cup of water (based on the paper cup measure).
Step 3
Place the microwave-safe container in the microwave without the lid or plastic wrap. Cook on high for about 5 minutes. You should see the water start to boil and the rice begin to cook. After 5 minutes, without removing the container from the microwave, let it rest for 1-2 minutes to steam.
Step 4
Carefully remove the container from the microwave. Using a rice paddle or spoon, gently stir the rice to distribute the sweet potato and mushrooms evenly. This helps to loosen any clumped rice grains and ensures even cooking.
Step 5
Now, cover the microwave container with its lid or plastic wrap (ensure you leave a small vent for steam to escape, or poke a few holes in the wrap). Return it to the microwave and cook on high for about 7 minutes. The rice will become fully cooked, and the flavors of the sweet potato and mushrooms will meld beautifully.
Step 6
After the 7 minutes of cooking, take the container out of the microwave and let it rest, covered, for another 2-3 minutes to allow the rice to steam further. This resting period enhances the texture and flavor of the rice. Once rested, remove the lid and enjoy your delicious sweet potato mushroom rice! Excluding the soaking time for the rice, this entire process takes only about 15 minutes for a wonderful meal.
Step 7
To make plain white rice: 1. Place the soaked white rice in a microwave-safe container and add the appropriate amount of water based on the rice quantity. 2. Remove the lid and microwave on high for 5 minutes to bring it to a boil. 3. Once boiling, cover the container (or plastic wrap) and microwave for another 7 minutes. 4. Finally, let it rest for 1-2 minutes before removing. Delicious white rice is ready!
