Main Ingredients- Kawaji No. 1 rice (for cooking rice)
- Spam 200g
- 1 large egg
Rice Fritter Filling- 1 onion (about the size of a child’s fist)

- 1 Tbsp chopped green onion

Cooking Instructions
Step 1
First, let’s cook the rice for our delicious rice fritters. Using the chewy and flavorful Kawaji No. 1 rice will make them even tastier. It’s best to cook the rice slightly firm so it holds its shape well when making the fritters.
Step 2
Now, let’s prepare the vegetables for the rice fritter filling. Finely dice the onion, carrot, and zucchini. Once diced, heat 1 tablespoon of cooking oil in a pan over medium-low heat and stir-fry the vegetables until they are slightly softened. Season with 0.5 teaspoon of salt. Add 1 tablespoon of chopped green onion towards the end for an aromatic touch. Let the stir-fried vegetables cool down slightly.
Step 3
Slice the Spam into approximately 1.5cm thick pieces. Then, carefully use a knife to hollow out the center of each Spam slice, creating a space to fill with rice. Be very careful not to cut yourself while using the knife!
Step 4
Next, we’ll create the rice fritter molds using the onion slices. Cut the onion into thick rounds, about 2cm thick. These will serve as molds for the rice, making them easy to fill and pretty when cooked.
Step 5
Combine the cooked rice with the stir-fried vegetables prepared in step 1. Mix them thoroughly using a spatula or spoon until well combined. Ensure the rice and vegetables are evenly distributed.
Step 6
Now, it’s time to assemble the rice fritters. Gently press the rice mixture (from step 4) into the hollowed-out Spam slices and the onion rings (from step 3), filling them completely without leaving any gaps. Be careful not to break the rice as you fill.
Step 7
Whisk one egg to make an egg wash. Lightly dip the filled Spam and onion molds into the egg wash. Place them in a pan with a little cooking oil over medium-low heat. Fry them until golden brown on both sides. The egg wash will help bind the rice and prevent it from falling apart as it cooks.
Step 8
I happened to have perilla leaves on hand, so I tried making a fritter with one! Placing a perilla leaf on top of the rice before dipping it in egg wash and frying adds a wonderful aromatic flavor that makes it truly delicious. If you have perilla leaves, definitely give this a try!
Step 9
