Ingredients

  • 100g sea tangle (maesaengi)
  • 1/4 carrot
  • 70g shrimp meat
  • 1/2 bowl cooked rice
  • 2 cups anchovy-kelp broth
  • 1 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare the fresh sea tangle. Gently loosen any clumps with your hands. Rinse it briefly under cold running water to remove any impurities. Be careful not to over-wash, as this can diminish its delicate flavor. Drain the washed sea tangle in a sieve.

Finely dice the carrot into very small pieces. This will ensure it cooks down and integrates smoothly into the porridge, adding a subtle sweetness and vibrant color.

Chop the shrimp meat into bite-sized pieces, slightly larger than the diced carrot. This will provide a pleasant texture to the porridge.

Pour the anchovy-kelp broth into a pot and bring it to a boil over medium heat. This flavorful broth forms the delicious base of the porridge.

Once the broth is boiling, add the diced carrot and cooked rice. Stir well with a spatula to prevent the rice from clumping, and let it simmer until the rice grains start to break down and the carrots soften, about 3-4 minutes.

As the porridge begins to thicken slightly, add the prepared sea tangle. Stir gently with a wooden spoon or ladle to distribute it evenly and prevent clumping. Cook for just a minute or two, as sea tangle cooks very quickly.

Once the sea tangle is well incorporated and tender, add the chopped shrimp meat. Continue to cook for another 1-2 minutes, or until the shrimp turns pink and is cooked through.

Season the porridge with 1 tablespoon of soy sauce for soup (guk-ganjang). Stir well to distribute the flavor. Taste and add more soy sauce if needed, but aim for a balanced savory taste rather than saltiness.
