Main Ingredients
  • 150g fresh oysters, cleaned
  • 2/3 cup dried seaweed (miyeok)
  • 1 medium onion

Seasonings & Others
  • 1 Tbsp fish sauce (for umami)
  • 1 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 1 Tbsp soup soy sauce (adjust to taste)
  • 1 Tbsp red snow crab soy sauce or regular soup soy sauce (for a richer flavor)
  • About 5-6 cups water

Cooking Instructions

Step 1

Prepare all your ingredients. Rinse the oysters under clean water and pat them dry. Peel the onion and cut it into large wedges.

Step 2

Soak the dried seaweed in cold water for about 15 minutes until it rehydrates. Once softened, drain the seaweed thoroughly and squeeze out any excess water. Cut the seaweed into bite-sized pieces.

Step 3

In a bowl, combine the drained seaweed with 1 tablespoon of fish sauce and 1 tablespoon of minced garlic. Gently massage the ingredients into the seaweed with your hands until well combined. This step helps the flavors penetrate.

Step 4

Heat 2 tablespoons of sesame oil in a pan over medium-low heat. Add the seasoned seaweed and sauté for about 2-3 minutes until it becomes tender and fragrant. You’ll notice a lovely nutty aroma.

Step 5

Pour about 5-6 cups of water into the pan with the sautéed seaweed. Add the large wedges of onion. Bring the soup to a boil over high heat, then reduce to medium heat and let it simmer until the onion pieces become translucent.

Step 6

Once the onion is translucent, add the prepared oysters to the pot. Cook for a few minutes until the oysters are just cooked through – this will release their wonderful flavor into the broth. Finally, season with 1 tablespoon of red snow crab soy sauce (or regular soup soy sauce) to taste. Bring to a gentle simmer, and your delicious Oyster and Seaweed Soup is ready to be enjoyed! You can add a pinch of salt if needed.
