Heartwarming Korean Fish Cake Soup (Odeng Guk)

A simple and delicious recipe for Korean fish cake soup (Odeng Guk), perfect for busy working moms. This version uses Hong Young-ui’s Red Crab Soy Sauce for a rich and savory broth in just 10 minutes.
Fish Cake Soup- 10 sheets Korean fish cakes (eomuk)
- 5 cups water (approx. 1,000ml)
- 3 Tbsp Hong Young-ui Red Crab Soy Sauce
- 1/2 onion
- 1/2 Tbsp minced garlic (using a rice spoon)
- 10 dried anchovies for broth
- 1 piece dried kelp (dashima), 5cm x 5cm
- 1 red chili pepper
- 1/2 green onion
Cooking Instructions
Step 1
First, prepare the ingredients for a clear and flavorful broth. Pour 5 cups (approx. 1,000ml) of water into a pot. Add 10 dried anchovies and a 5x5cm piece of dried kelp. For an even deeper flavor, add half an onion whole. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10-15 minutes to extract the broth’s essence. This quantity is generous enough for a family of four.
Step 2
While the broth is simmering, prepare the fish cakes. Cut your fish cakes (Korean style, either flat or rectangular) into three equal pieces. Fold each piece twice to create a wavy shape and thread them onto skewers. If skewers are unavailable, you can use wooden chopsticks or simply cut the fish cakes and add them directly to the pot. Skewering helps maintain their shape and makes for an appealing presentation.
Step 3
Once the broth has adequately simmered, remove and discard the anchovies, kelp, and onion, leaving only the clear broth. Stir in 1/2 tablespoon of minced garlic and 3 tablespoons of Hong Young-ui Red Crab Soy Sauce to season. This special soy sauce, made with over 95% domestic ingredients, is safe to use and adds a wonderful umami depth. Stir well to ensure the seasoning is evenly distributed.
Step 4
Add the prepared fish cake skewers to the broth and bring it back to a boil. Cook for about 5 more minutes, or until the fish cakes are tender and fully heated through. Finally, garnish with diagonally sliced red chili pepper and sliced green onion. Let it simmer for another moment.
