Ingredients- 3 large onions
- 3 Tbsp butter
- 100ml dry white wine
- 750ml water
- 1 bay leaf
- 1 Tbsp beef stock or broth
- 4 slices baguette
- Plenty of Gruyère cheese
- Salt to taste
- Sugar to taste
- Pepper to taste
Cooking Instructions
Step 1
Peel and thinly slice 3 large onions into uniform strips, about 3mm thick. Ensuring consistent thickness will help them cook evenly.
Step 2
Melt 3 Tbsp of butter in a wide pan over medium heat. Add the sliced onions, along with a pinch of salt and sugar. Sauté slowly and patiently until the onions turn a deep brown color and become caramelized. This process is crucial for developing the soup’s rich flavor. This may take about 20-30 minutes.
Step 3
Pour 100ml of dry white wine into the caramelized onions. Cook over medium heat, stirring occasionally, until the alcohol smell dissipates and the wine is mostly evaporated. The wine enhances the onion’s sweetness and depth.
Step 4
Add 750ml of water, 1 Tbsp of beef stock or broth, 1 bay leaf, and a pinch of pepper. Stir well. Reduce the heat to low, cover the pot, and let it simmer gently for about 45 minutes. This slow simmering allows the flavors to meld beautifully.
Step 5
While the soup simmers, slice the baguette into thick pieces, about 1.5cm thick. Arrange the baguette slices on a baking sheet and generously grate Gruyère cheese over each slice. Place under a preheated broiler (or in a hot oven at around 180°C/350°F) until the cheese is melted and bubbly. Watch closely to prevent burning.
Step 6
Remove the bay leaf from the soup. Carefully ladle the hot onion soup into individual serving bowls. Place the cheese-topped baguette slices on top of the soup.
Step 7
For an extra cheesy topping, add more grated Gruyère cheese over the baguette. If you have a kitchen torch, gently toast the cheese until it’s golden brown and bubbly. This adds a wonderful texture and aroma.
