How to Make a Simple and Delicious Fish Cake Soup for Chilly Weather
As the weather turns chilly, a warm, comforting soup is just what you need. I’ve prepared a simple fish cake soup recipe today, perfect as a side dish with rice or even as a light snack. The combination of a refreshing broth and chewy fish cakes is truly delightful. Let’s dive into this easy yet flavorful recipe!
Soup Ingredients- 3 sheets of square fish cakes (Eomuk)
- 1 Tbsp minced garlic
- 150g Korean radish (Moo)
- 1/3 stalk of green onion
- 1 soup pack (containing anchovies, kelp, etc.)
- 6g dried kelp (Dashima)
- Pinch of black pepper
Seasoning for Broth- 1/2 Tbsp Tteokbokki sauce base (Tteokbokki Jjan) or soy sauce
- 1/3 Tbsp anchovy sauce (Myeolchi Aekjeot) or soup soy sauce (Gukganjang)
- 1/2 Tbsp Tteokbokki sauce base (Tteokbokki Jjan) or soy sauce
- 1/3 Tbsp anchovy sauce (Myeolchi Aekjeot) or soup soy sauce (Gukganjang)
Cooking Instructions
Step 1
First, let’s create the flavorful broth, the foundation of our soup. In a pot, add 600ml of water, along with the soup pack and 6g of dried kelp.
Step 2
Cut the Korean radish into bite-sized cubes, about 1-1.5cm thick. Prepare the fish cakes by cutting them into your desired shapes – I opted for triangles. Slice the green onion diagonally into large pieces.
Step 3
Bring the broth to a boil. After about 8 minutes, remove and discard the dried kelp and the soup pack. Be careful not to over-boil the kelp, as it can impart a bitter taste.
Step 4
Add the prepared radish and fish cakes to the simmering broth. Let it cook until the radish becomes translucent and tender.
Step 5
Once the radish is partially cooked, stir in 1 Tbsp of minced garlic. Season the broth with 1/2 Tbsp of Tteokbokki sauce base (or soy sauce) and 1/3 Tbsp of anchovy sauce (or soup soy sauce). Taste and adjust the seasoning as needed.
Step 6
Finally, add the diagonally sliced green onions and let the soup simmer for another minute or two. Ladle the hot fish cake soup into bowls and finish with a sprinkle of black pepper. Enjoy your delicious and warming fish cake soup!
