  • Somen noodles 400g
  • Fish cakes 350g
  • Tteokbokki rice cakes 12 pieces (optional, for added chewiness)
  • Dried anchovies 1 handful (for broth)
  • Dried kelp 5 pieces (approx. 5x5cm)
  • Soup soy sauce 3 Tbsp (adjust to taste)
  • Black pepper a pinch (about 2 twists)
  • Korean green chili peppers 2 (for a spicy kick)
  • Green onion 5cm length

Cooking Instructions

First, let’s make the flavorful broth that forms the base of this delicious soup. In a pot, combine 1 liter of water, a handful of dried anchovies, and 5 pieces of dried kelp. Bring to a boil, then remove the kelp. Reduce the heat to medium-low and simmer for about 10 minutes to extract a rich anchovy broth. For a clear and refreshing taste, it’s recommended to remove the anchovies’ intestines beforehand. Finally, add 3 tablespoons of soup soy sauce to season. At this stage, the broth should taste slightly saltier than you prefer, as the other ingredients will balance the flavor.

Cut the fish cakes into bite-sized pieces. Slicing them into 2-3 pieces or smaller rectangles will make them easier to enjoy with the broth.

Remove the anchovies and kelp from the broth. Add the prepared fish cakes to the pot and let them simmer in the broth.

Add a pinch of black pepper, about two twists, to the broth for a touch of spice and aroma. Be careful not to add too much, or it might become too peppery.

If you enjoy a bit of heat, prepare 2 Korean green chili peppers. Lightly slit them down the middle with a knife to release their spiciness into the broth. Slice the green onion diagonally into large pieces (about 5cm long) and add them to the pot. Let this simmer for another 3 minutes to allow the flavors of the vegetables to infuse into the soup.

Now it’s time to cook the somen noodles. In a generous amount of boiling water, add 400g of somen noodles and cook for 3-4 minutes. Be mindful of the cooking time to prevent the noodles from becoming mushy. Once cooked, immediately rinse the noodles under cold running water to remove excess starch, then drain them thoroughly in a colander. This step ensures the noodles remain firm and chewy.
