Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water. After rinsing, drain them well in a colander. This ensures the soup remains clear and not cloudy.
Step 2
Cut the radish into 3cm thick pieces, then slice them thinly into matchsticks. Slicing them thinly allows the radish flavor to infuse beautifully into the broth and makes them tender to eat.
Step 3
Heat a pot over medium-high heat. Add 1 Tbsp of sesame oil and 1 Tbsp of anchovy sauce. Add the julienned radish and stir-fry for about 1 minute. This step draws out the radish’s fresh flavor and coats it with the savory anchovy sauce.
Step 4
Once the radish is slightly softened, add the drained bean sprouts and another 1 Tbsp of sesame oil. Stir-fry them together with the radish. Lightly cooking the bean sprouts preserves their crispness while deepening the soup’s flavor.
Step 5
Pour in 1.5 liters (about 7-8 cups) of water and add the piece of kelp to the pot with the stir-fried radish and bean sprouts. Bring to a boil over high heat. Remember to remove the kelp once the water starts boiling to prevent the soup from becoming bitter or cloudy.
Step 6
As the soup comes to a rolling boil, add the fish cake, sliced green chili pepper (if using), and green onion. Stir in 1 Tbsp of minced garlic. The combination of ingredients will release a wonderful aroma.
Step 7
Finally, season the soup with the remaining 2 Tbsp of anchovy sauce and 1/2 Tbsp of salt. Taste the broth and adjust the seasoning with more anchovy sauce or salt as needed to suit your preference. Your clear and refreshing fish cake and bean sprout soup is ready to enjoy!
