I’ve transformed ordinary surimi (fish cake) into visually appealing and delicious heart-shaped pancakes. They are simple to make yet perfect for special occasions or as a snack for kids. The carefully crafted heart shapes will add a lovely touch to your dining table.

Ingredients

  • 10 pieces of surimi (long stick type)
  • 2 eggs
  • 2 Korean green chili peppers (adjust for spice preference)
  • 1/4 carrot
  • Cooking oil, as needed
  • 10 toothpicks

Cooking Instructions

Step 1

Prepare the surimi. Slice each piece lengthwise in half, similar to how you would prepare it for kimbap (seaweed rice rolls). This makes it easier to form the heart shape.

Step 2

Gently overlap two halves of the sliced surimi to create a ‘v’ shape, forming a heart. Secure the shape firmly with a toothpick to prevent it from coming apart. Think of yourself as crafting a miniature piece of art.

Step 3

Prepare the vegetables to add color and flavor to your surimi pancakes. Finely mince the carrot. Seed the Korean green chili peppers and mince them finely as well. If you prefer less spice, you can substitute with bell peppers or other vegetables. (Tip: Using a food processor or chopper makes mincing vegetables quick and easy.)

Step 4

In a wide bowl, crack and whisk the 2 eggs until well beaten. Add the minced carrot and chili peppers to the egg mixture and stir to combine, creating your egg batter. The colorful vegetables mixed into the batter will make the pancakes visually appealing and more nutritious.

Step 5

Heat a non-stick pan over low heat and add a generous amount of cooking oil. It’s important to keep the heat low to prevent the surimi from burning. Carefully place the prepared heart-shaped surimi pieces onto the preheated pan.

Step 6

Now, it’s time to fill the center of the heart shapes with the egg batter. Using a spoon, carefully pour the prepared egg batter into the inner space of each heart shape. As the egg cooks, it will bind with the surimi, creating a delicious pancake.

Step 7

Once the egg batter is fully cooked and the surimi is golden brown on both sides, your pancakes are ready. Let the pancakes cool slightly before carefully removing the toothpicks. Your beautiful heart-shaped surimi pancakes are now complete. They are delicious served warm or even when cooled.
