Basic Tofu Spread
  • 1 block Tofu (approx. 400g)
  • 35g Maple syrup (or honey)
  • 25g Roasted soybean powder (or multi-grain powder)
  • 2 pinches Salt

Cocoa Tofu Spread
  • 200g Tofu spread (or pre-made basic tofu spread)
  • 25g Unsweetened cocoa powder
  • 2 pinches Salt

Sandwich Toppings
  • Frozen raspberries or preferred berries, as needed
  • 4-5 Cherry tomatoes, halved
  • A small amount of sunflower seeds or pumpkin seeds
  • 4-5 Fresh basil leaves
  • Fresh mozzarella cheese, a small amount (optional)
  • Whole wheat bread or sliced bread, as needed

Cooking Instructions

Step 1

To eliminate any bean-like odor from the tofu, start by lightly blanching 1 block of tofu (about 400g) in warm water for 1-2 minutes.

Step 2

Immediately after blanching, rinse the tofu under cold water to cool it down. Then, drain it thoroughly in a colander. For best results, refrigerate the drained tofu for at least 2 hours to further remove moisture, which helps achieve a better spread consistency.

Step 3

Place the chilled tofu and 35g of maple syrup into a blender or use a hand blender. Blend until you achieve a smooth, creamy texture. Ensure there are no lumps for a perfectly smooth spread.

Step 4

This is your basic tofu spread (tofu jam)! While you can enjoy it as is, we’ll proceed to create sandwich spreads.

Step 5

Divide the prepared basic tofu spread equally into two separate bowls, about 200g each. This sets you up to make two different flavors.

Step 6

Now, let’s make two distinct tofu spreads. To one bowl, add 25g of roasted soybean powder for a nutty flavor. To the other bowl, add 25g of cocoa powder for a rich, chocolatey taste.

Step 7

Add two pinches of salt to each bowl to balance the flavors. Mix thoroughly with a spoon or spatula until the ingredients are evenly incorporated. The soybean powder adds nuttiness, while the cocoa powder brings a sweet and slightly bitter chocolate essence.

Step 8

For optimal flavor development, cover the two tofu spreads (basic and cocoa) and refrigerate them for at least overnight. This aging process allows the flavors to meld and deepen, resulting in a more delicious spread.

Step 9

Finally, spread the matured tofu jam and cocoa tofu jam generously onto your whole wheat or sliced bread. Top with fresh raspberries, halved cherry tomatoes, sunflower seeds, basil leaves, and a bit of fresh mozzarella cheese (if using). Your ‘Cocoa Tofu Jam Sandwich’ is now complete!
