Main Ingredients

  • 1 block Tofu (firm or silken can be used)
  • 500ml Cold water

Cooking Instructions

Step 1

First, prepare 1 block of tofu. Bring a pot of water to a boil, then add the tofu and blanch for 3-4 minutes. This step helps remove any beany smell from the tofu and makes it softer.

Immediately remove the blanched tofu and submerge it in the prepared 500ml of cold water for 10 minutes to cool. Shocking the tofu in cold water makes its texture more pleasantly firm.

Drain the tofu, cut it into 4 portions, place it in an airtight container, and refrigerate for 2 hours. This allows some moisture to evaporate, resulting in a better jam consistency.

After 2 hours, take the tofu out of the refrigerator, add 2 tablespoons of honey, and blend until smooth using an immersion blender or food processor. Continue blending until it forms a smooth paste.

It’s crucial to blend for about 1-2 minutes with the immersion blender, or until the tofu is completely smooth and creamy with no lumps. If using a food processor, blend until smooth without stopping.

Divide the blended tofu base into three equal portions. To the first portion (1/3), add 2 tablespoons of mugwort powder and mix thoroughly until smooth and lump-free. The fragrant mugwort adds a healthy, earthy flavor.

To the second portion (1/3), add 2 tablespoons of soybean flour and mix gently. The nutty flavor of soybean flour adds a richer taste.

For the final portion (1/3), add 2 tablespoons of cacao powder and mix well. This creates a rich chocolate flavor that even children will love.

Spoon each of the three flavored tofu jams into separate attractive jars. Store the finished jams in airtight containers in the refrigerator for consumption over the next few days.
