  • 1 Korean Green Chili Pepper (Cheongyang pepper)

  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • 1/2 Tbsp Minced Garlic
  • 1/2 Tbsp Starch Powder (e.g., potato or corn starch)
  • 2 Eggs
  • 1 tsp Sesame Oil
  • 2-3 pinches Salt

Cooking Instructions

Step 1

First, grind the 90-100g of dried shrimp into a fine powder using a blender or food processor. This shrimp powder will serve as the coating for the croquettes.

Lightly blanch the 1 block (approx. 150g) of tofu in boiling water or heat it in the microwave until warm. Then, wrap it in a cheesecloth or paper towel and squeeze out as much water as possible. In a bowl, combine the mashed tofu with 1 Tbsp soy sauce, 1 Tbsp sesame oil, 1/2 Tbsp minced garlic, 1/2 Tbsp starch powder, and 1 finely chopped Korean green chili pepper. Knead everything together until well combined. Once the mixture forms a dough, shape it into small, flattened rounds.

In a separate bowl, crack 2 eggs. Add 1 tsp sesame oil and 2-3 pinches of salt, then whisk everything together thoroughly to create an egg wash. The salt helps to reduce any eggy smell and season the mixture.

Dip each shaped tofu patty into the prepared egg wash, ensuring it’s evenly coated on all sides. The egg wash acts as a binder, helping the shrimp powder adhere smoothly in the next step.

Now, place the egg-coated tofu patties into the finely ground dried shrimp powder. Roll them around gently, pressing lightly so the shrimp powder coats them evenly and thoroughly. A generous coating of shrimp powder will ensure a crispier and more flavorful crust when cooked.

Preheat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Carefully place the shrimp-coated tofu croquettes into the hot pan. Cook, flipping them occasionally, until they are golden brown and crispy on both sides, being careful not to burn them. Ensure they are heated through to the center, and your delicious tofu croquettes are ready to enjoy!
