Main Ingredients
  • 1.5 bowls mixed grain rice
  • 1/2 block firm tofu
  • 2 eggs
  • 12 cooked cocktail shrimp
  • 3 Tbsp chopped green onion
  • 1/2 medium onion
  • 1 green bell pepper
  • 3 cloves garlic, minced

Cooking Instructions

Step 1

Drain the tofu well using paper towels. Then, mash it using the back of a knife. Place the mashed tofu in a dry pan (no oil needed) over medium heat and cook until the moisture evaporates. This process will give the tofu a firmer, more crumbly texture.

Step 2

Heat a lightly oiled pan over medium heat. Crack the 2 eggs into the pan and quickly stir with chopsticks to scramble them. It’s best to cook them until just set but still soft.

Step 3

Wash the onion and green bell pepper, remove seeds, and finely mince them. Mince the garlic cloves. Finely chopping the vegetables ensures they distribute evenly in the fried rice and contribute to a pleasant texture.

Step 4

In a clean pan, add 2 Tbsp of olive oil and heat over medium-low heat. Add the minced garlic and sauté until fragrant. Be careful not to burn the garlic; the goal is to release its aroma.

Step 5

Once the garlic is fragrant, add the prepared cocktail shrimp and 1 tsp of cooking wine. Sauté until the shrimp turn pink and begin to cook. The cooking wine helps to remove any fishy odor from the shrimp.

Step 6

When the shrimp are about half cooked, add the minced onion and stir-fry until it becomes translucent. The onions will release their natural sweetness, enhancing the flavor of the fried rice.

Step 7

Once the onion is partially cooked, add the minced green bell pepper and stir-fry together. The slight crunch and vibrant color of the bell pepper will add freshness to the dish.

Step 8

When all the vegetables and shrimp are well combined, add the 1.5 bowls of mixed grain rice. Use a spatula to break up any clumps of rice and stir-fry until everything is evenly mixed. Ensuring the rice is loose is key for good fried rice.

Step 9

After the rice is well incorporated with the other ingredients, add 1 Tbsp of sesame oil, a pinch of salt, and a pinch of black pepper to season. Adjust to your taste. You can also add a little soy sauce or oyster sauce for extra flavor.

Step 10

Finally, add the chopped green onions and give it a quick stir. This delicious tofu and shrimp fried rice is now ready! The aromatic green onions will further elevate the taste.

Step 11

Transfer the finished fried rice to a serving bowl and sprinkle with sesame seeds for garnish. The nutty flavor of the sesame seeds adds a delightful finishing touch.
